If there were ever a packet of biscuits that I could demolish, then it would definitely have to be a Mint Slice! They are a biscuit, with a white creme layer and then covered in dark chocolate, they are heaven. Thanks to this great Thins Mints recipe I was able to find, we were able to enjoy a good ol mint slice again! I changed the thin mints recipe slightly to be more mint slice inspired, by exchanging Cocoa powder for Coconut flour in order to keep the biscuit light and added some peppermint extract to the biscuit base to really give you that mint sensation

Step-by-step

  • Pre-heat oven to 130°C (Fan Forced).
  • In a large bowl add the Almond Flour, Coconut Flour, Sweetener, Salt and Baking Powder, mix to combine.
  • Next add the Egg, Butter, Peppermint and Vanilla, mix well until the dough forms.
  • Roll out the dough between two sheets of baking paper, using a 5cm or 7cm cookie cutter, cut out 12 to 16 biscuits depending on the size that you use.
  • Gather the scraps of dough and re roll out to make the remaining cookies.
  • Bake for approximately 20 minutes or until firm to touch and golden.
  • Remove and set aside to cool.
  • Bring a pot of water to the boil and reduce to simmer, place a non stick pot on top (but not touching the water), add the Chocolate and Butter, stirring continuously, once melted, remove from the heat and add the Peppermint.
  • Dip the cookies into the chocolate, using two forks flip the cookie until totally covered.
  • Using the side of the fork scrape of any excess form the top and tap on the side to remove drips.
  • Place on a sheet of baking paper and into the fridge to set.
  • Allow to set for at least 1 hour.
