Step-by-step

  • Start by making the sauce if you don't have any already made.
  • While the sauce simmers, slice the eggplant into 1/4 inch thick slices. Lightly salt the slices and put in a colander to release excess moisture for about 1/2 hour. Lay on paper towels to soak up any extra moisture.
  • Preheat oven to 450°.
  • Brush eggplant lightly with olive oil on both sides and place on cookie sheets. Bake for 20-25 minutes, turning half way through until eggplant is golden brown.
  • In a medium bowl combine ricotta, egg, parsley and 1/4 cup of grated cheese.
  • In a 9x12 baking dish, put a little sauce on the bottom of the dish and put a layer of eggplant to cover the bottom of the dish. Top with 1/3 of the ricotta cheese mixture, mozzarella cheese and sauce. Add another layer of eggplant and repeat the ricotta cheese, mozzarella cheese and sauce until everything is used up. Top with sauce and the mozzarella cheese and the remaining grated cheese.
  • Cover with foil and bake until cheese is melted and everything is bubbling, about 30 minutes at 400°.
  • Remove foil and bake an additional 8-10 minutes.
  • Take it out of the oven and let it sit about 10 minutes before cutting. Enjoy!

Between work deadlines, school pick-ups, and the never-ending cycle of laundry, the last thing I want to do is spend hours in the kitchen. That's why I'm constantly on the lookout for quick, easy, and healthy recipes that the whole family will enjoy. This Lighter Eggplant Parmesan is a perfect example – a satisfying, flavorful dish that's surprisingly easy to make on a busy weeknight.

The secret to this recipe's success lies in its simplicity. No complicated techniques, no obscure ingredients – just fresh, wholesome ingredients transformed into a comforting classic. I’ve lightened it up by using fat-free ricotta and reduced-fat mozzarella, but trust me, it doesn’t compromise on taste one bit. The eggplant, roasted to golden perfection, provides a satisfying texture, while the rich tomato sauce and creamy ricotta filling create a delightful balance of flavors.

One of the things I love most about this recipe is its versatility. Feel free to experiment with different cheeses – a blend of parmesan and provolone would be delicious, for example. You can also add other vegetables to the mix, such as sautéed zucchini or bell peppers, for extra nutrients and flavor. I often add a sprinkle of red pepper flakes for a touch of heat, depending on my family’s preference that day.

This recipe is more than just a quick meal; it’s a way to connect with my family around the dinner table. The aroma of the baking eggplant and melted cheese fills the kitchen, creating a warm and inviting atmosphere. It’s a simple pleasure, but one that I truly cherish. The satisfaction of creating a delicious and healthy meal from scratch, knowing that my family will enjoy every bite, is a reward in itself. It's a small act of love, a way to show my family that I care, even amidst the whirlwind of a busy life.
