This is a wonderfully simple dish. I made it as part of a challenge to eat organic food cheaply and it was such a success! It was quick to make, inexpensive and really delicious. The flavors all go together perfectly and each bite feels so nourishing and warming! If you want to spice it up you can add more to the dressing — some tahini, tamari, sesame oil and chili does wonders — but it's also really lovely quite plain with just the awesome flavors of the veggies and beans with subtle hints of lemon.
