Step-by-step

  • Preheat oven to 350 degrees.
  • Line baking dish with foil for easy cleanup. Spray a little baking spray on foil so chops are easy to lift off.
  • Prep your chops by cutting off excess fat and making a small pocket in the side of each chop to hold the stuffing mix.
  • Sauté onion, celery, and butter in a small saucepan on low heat until soft - about 4-5 minutes. Remove from heat.
  • Add stuffing mix.
  • Add a can of corn - add can juice until the stuffing is sticking together, not too moist. If you put too much liquid in, add a little more stuffing mix.
  • Add cumin, salt, and pepper.
  • Carefully (stuffing may be hot), use a spoon to stuff the pork chop pockets until full. You can pile any leftover stuffing around the chops in the baking dish.
  • Put chops in the baking dish. Salt and pepper the top of the chops as desired, or use a pork seasoning mixture.
  • Bake for about 40 minutes, or until the inside of the chop reaches 160 degrees.
  • Remove from oven, cover with foil, and set aside for a couple of minutes.
