Step-by-step

  • Trim a little of the fat from pork chops, or leave it on, whichever you prefer.
  • Mix Paprika, Pork Chop Seasoning, salt, and pepper and rub the pork chops with that mixture.
  • Turn Instant Pot to SAUTE, HIGH HEAT and heat 1 T olive oil; then brown two pork chops, about 2-3 minutes per side.
  • Add the other 2 tsp. olive oil and brown the other two pork chops.
  • Remove pork chops to a plate.
  • While the chops brown, mix together vinegar, granulated garlic, dried thyme, chicken stock and the other 1 T olive oil.
  • When you’ve browned and removed all the pork chops, add that liquid mixture to the Instant Pot and scrape off any browned bits in the bottom of the pot.
  • Add pork chops to the Instant Pot, pushing them down under the liquid as much as you can, lock the lid, and set Instant Pot to MANUAL, HIGH PRESSURE, 10 minutes.
  • When the cooking time ends, use NATURAL RELEASE to release the pressure.
  • Remove the pork chops to a serving dish and cover with foil to keep warm.
  • If you want a smooth sauce without any lumps, use a Fat Skimmer to strain out the herbs and bits of browned meat from the sauce.
  • Then set pressure cooker to SAUTE, HIGH HEAT and simmer the sauce about 10-15 minutes to reduce it to the thickness you prefer.
  • Serve pork chops hot, with sauce to spoon over the meat.

My Weeknight Instant Pot Hero: Paprika Pork Chops

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and delicious, and let me tell you, this Instant Pot Paprika Pork Chop recipe is my absolute lifesaver. I used to dread weeknight dinners, the endless cycle of figuring out what to make, prepping ingredients, and then battling the cleanup afterwards. But this recipe? It's transformed my weeknight routine. The Instant Pot does most of the work, and the flavor? Oh my goodness, the flavor. The paprika gives the pork chops a beautiful smoky sweetness, and the sauce is rich and savory. It's the perfect combination of comfort food and healthy eating. My kids, even the pickiest eaters, gobble this up!

What I love most about this recipe: It’s incredibly versatile. I often adjust the seasonings based on what I have on hand. Sometimes I add a pinch of cayenne for a little kick, or a dash of brown sugar to enhance the sweetness of the paprika. The beauty of this recipe lies in its adaptability. The ingredients are simple, readily available in most supermarkets, and I often find myself modifying it with whatever fresh herbs or vegetables I have. This is one of my favorite recipes. I serve it with roasted vegetables or a simple salad for a well-rounded, satisfying meal. The sauce, especially, is fantastic; I've been known to double the recipe just so I have extra for dipping bread.

Beyond the ease and flavor, this recipe fits perfectly into my low-carb lifestyle. Pork chops are a lean protein source, and the overall carb count is minimal. It's guilt-free indulgence at its finest. No more stressing about what to make for dinner, no more spending hours in the kitchen – just flavorful, satisfying meals that I can confidently serve my family and myself. That, in a nutshell, is the magic of this Instant Pot Paprika Pork Chop recipe, and why it's become a weekly staple in our home. The ease of the recipe is only amplified by the deliciousness of the results – a perfect combination that any busy mom (or anyone, really) can appreciate.

Tips and tricks for success: Don’t be afraid to experiment with different types of paprika – smoked paprika adds a wonderful depth of flavor. If you’re short on time, you can skip the sauce reduction step – it still tastes great! And don’t hesitate to add other vegetables to the Instant Pot while cooking the pork chops – diced potatoes, carrots, or green beans would all work beautifully. Honestly, I've made it so many times that it's now just ingrained into my weekly meal prep. There's nothing to stress over, it comes out delicious every single time, and most importantly, my family loves it.

One of the best parts of this recipe, aside from its simple nature, is the leftovers. This dish reheats beautifully, making it a perfect choice for busy lunchboxes. I often pack the leftover pork chops and sauce in my kids’ lunchboxes, and they always come back clean. Knowing I have a quick, healthy, and delicious meal ready to go for dinner and even lunch the next day makes this recipe even more appealing. The recipe is so simple, and the cleaning up is an absolute breeze! This Instant Pot Paprika Pork Chop recipe has become my go-to for weeknight dinners.
