Step-by-step

  • Preheat oven to 180°C/350°F and line 3 8-inch pans with baking paper.
  • Using the paddle attachment, cream the oil and sugar and vanilla together.
  • Add in the eggs and egg yolk and continue to beat the mixture.

  • Add the dry ingredients to the egg mixture, alternating with the milk. Mix until just combined.
  • Add the warm espresso shots to the mixture and mix only until everything is just combined.
  • Divide the batter between the 3 pans and bake for 25-27 minutes or until a fork inserted comes out clean.
  • Place your espresso shot in the fridge to allow it to cool slightly.
  • In a saucepan, bring the 150g of sugar and the water to a simmer.
  • Allow to simmer until it reaches the soft ball stage (about 110°C).
  • Meanwhile, beat the egg whites with the remaining sugar until stiff peaks.
  • Once the sugar reaches the soft ball stage, pour the sugar mixture into the egg white mixture while beating on high speed. Make sure you pour the syrup in, in a slow steady stream.
  • Continue to whip the mixture on high speed until the bowl has cooled down slightly.
  • Then add the butter blocks to the mixture, one block at a time. Continue to mix until you have a delicious creamy buttercream.
  • Then slowly pour in the cooled espresso shot and whip until well combined.
  • Assembling the Cake: Cut off the tops of each layer using a cake leveller or knife to ensure all layers are even.
  • Place a little buttercream on the bottom layer and spread until evenly distributed.
  • Place the next layer on top of the buttercream and repeat step 1.
  • Place the last layer and then top with remaining buttercream.
  • Spread the buttercream around the top and then down the sides. Using an offset spatula to smooth the buttercream around the entire cake.
  • Then use a cake scraper to smooth the cake as well as to remove all the excess buttercream.
  • Lastly, pipe a few "blobs" on top of the cake or top with fresh flowers.

My Moist Layered Coffee Cake Adventure: A Baker's Tale

As a busy professional woman, juggling a demanding career and a desire for homemade treats always seemed like a Herculean task. Weekends were precious, and the thought of spending hours in the kitchen felt like an insurmountable hurdle. Yet, the craving for something sweet, something comforting, something truly delicious, persisted. That's where my love affair with baking, specifically this decadent layered coffee cake, began. It wasn't just about the taste; it was about reclaiming a piece of myself, a moment of calm amidst the chaos of everyday life.

The allure of this coffee cake recipe wasn’t just its moist texture and rich coffee flavor; it was the promise of a beautiful, layered masterpiece. The image of perfectly smooth buttercream, impeccably layered cakes, and a professional finish whispered to me from countless baking blogs and Instagram feeds. I, however, am not a professional baker; I am a woman who appreciates a good challenge and the undeniable satisfaction of creating something beautiful, edible, and deeply personal.

The journey began, as all good baking adventures do, with a carefully curated list of ingredients. The precise measurements, the quality of the ingredients, all contributed to the final product. I carefully selected my coffee beans, ensuring a robust and intense flavor that would complement the sweetness of the cake. The process itself was a meditative experience. The rhythmic whisking of the buttercream, the gentle folding of the batter, these repetitive motions transformed a stressful day into a calm, productive one. The kitchen transformed from a place of potential chaos into my personal sanctuary. The aromas of baking coffee and vanilla filled my home, creating an atmosphere of warmth and comfort.

Each layer, carefully leveled and frosted, became a testament to my patience and dedication. It was a process of trial and error, learning from each little mistake and celebrating every tiny victory. The moments of doubt were many – the buttercream that refused to whip to the perfect consistency, the layers that didn’t quite align – but the eventual triumph, the moment when the cake was finally assembled and ready to be devoured, was beyond rewarding.

The finished product was more than just a cake; it was a symbol of my perseverance, a tangible representation of my ability to create something beautiful even amidst the pressures of daily life. It was a sweet reward for a long week, a delicious treat to share with loved ones, and a proud testament to my personal growth.
