Step-by-step

  • In a large bowl or the bowl of a stand mixer fitted with a kneading hook, add warm water, milk and 1 Tbsp of sugar. Stir to combine.
  • Sprinkle yeast over-top and stir. Allow to stand 5 minutes, until frothy.
  • Add remaining 3 Tbsp sugar, egg, butter, salt and 2 cups of the flour. Mix to combine.
  • Begin adding more flour, a bit at a time, until dough comes together. Continue kneading, adding flour as necessary until you have a soft, moist and smooth dough.
  • Remove dough to a greased bowl, cover and allow to rise until doubled, about 45 minutes.
  • Grease two 6-cup or one 12-cup muffin tins and set aside.
  • Prepare apple filling by combining all ingredients and stirring to combine. Cover and set-aside.
  • Turn dough out onto a floured surface. Roll into a thin rectangle 16x20-inch approximately.
  • Using a 2 3/4-inch cutter, cut 30 circles of dough.
  • Take 5 circles of dough and place in a line overlapping slightly. Use your rolling pin to lightly roll the line of dough to expand it slightly.
  • Lay a row of apple mixture down the centre of the dough. Starting at the end closest to you, start rolling tightly until you have reached the end.
  • Using a sharp knife, cut the roll in half. Place the two pieces, cut side down in cups of the prepared muffin tins.
  • Repeat making 5 more dough rolls like this. You will have 12 rolls when you are done.
  • Cover your rolls with a towel and allow to rise until puffy, about 30 minutes.
  • Preheat oven to 350 F. When buns have risen, remove towel and place in oven to bake for 15 minutes.
  • While they are baking, heat the glaze mixture in a small saucepan until mixture boils. Remove from heat.
  • When buns have baked for 15 minutes, remove from oven and lightly coat all the buns with some of the glaze. Return to the oven and bake another 5 minutes, or until buns are golden and glaze is bubbling.
  • Allow to stand a few minutes, then remove rolls to a cooling rack with a baking sheet underneath.
  • Allow to cool slightly, then brush rolls with remaining glaze mixture, glazing twice if you have more glaze left to use up.
  • Allow to cool until glaze sets or completely.
  • These are best on the day they are baked. If you can't eat them all right away, they do freeze beautifully.

My Unexpected Baking Adventure: Sticky Apple Cinnamon Rose Buns

Baking has never been my forte. I'm more of a "grab-and-go" kind of person, fueled by quick lunches and even quicker dinners. My kitchen is usually a whirlwind of activity, a testament to my busy lifestyle juggling work, family, and the occasional spontaneous weekend getaway. But last week, something changed. A friend, knowing my penchant for all things apple and cinnamon, gifted me a beautiful, perfectly ripe Red Prince apple. Its vibrant color and intoxicating aroma somehow sparked a dormant baking gene I didn't know I possessed. And thus began my journey with these delightful Sticky Apple Cinnamon Rose Buns.

The recipe itself was deceptively simple, at least on paper. The process, however, was a lesson in patience and precision. Kneading the dough felt oddly therapeutic, a rhythmic counterpoint to my usual frenetic pace. Watching the dough rise, expanding like a soft, fragrant cloud, was mesmerizing. Then came the meticulous work of shaping the buns into those gorgeous, swirly roses. Each petal, carefully crafted, felt like a small act of self-care amidst the chaos of daily life. The scent of baking apples and cinnamon filled my kitchen, transforming it into a comforting haven. It was more than just baking; it was a mindful experience, a quiet escape from the constant demands of my schedule.

The final result? Oh, the glory! These buns weren't just visually stunning; they were a symphony of flavors and textures. The soft, pillowy dough, the sweet and tart apple filling, the warm embrace of cinnamon, and the luscious, sticky glaze – each bite was a little piece of heaven. They were perfect for a quiet evening at home, enjoyed with a cup of steaming tea, a welcome respite from the whirlwind of my life. Baking these buns taught me more than just a recipe; it taught me the value of slowing down, savoring the process, and finding joy in the simple act of creating something beautiful and delicious.

And the best part? These buns disappeared almost as quickly as I made them. My family loved them, and I found myself planning another baking adventure, already dreaming of what delicious treats I'll create next. The kitchen, once a place of quick meals and hurried cleanups, is now beginning to feel like a sanctuary, a creative space where I can escape the everyday and find solace in the art of baking. Perhaps, with enough time and practice, I'll even master the art of sourdough!

Ingredients used: The recipe called for standard baking ingredients – flour, sugar, yeast, eggs, butter, milk, cinnamon, and of course, that magnificent Red Prince apple. The glaze was simple, using maple syrup to complement the apple's sweetness perfectly. The entire process was relatively straightforward, although, I will admit, the shaping of the rose buns required a bit more patience than I initially anticipated.

Tips for Success: Don't rush the rising process; allow the dough plenty of time to double in size. Use a good quality yeast for best results. And don't be afraid to experiment – the recipe is adaptable to other fruits and spices, too. I can already envision a blueberry cinnamon variation!

Beyond the Recipe: More than just a recipe, this experience became a valuable reminder to find moments of peace and creativity amidst the busy demands of life. It’s surprising how such a simple act as baking can bring so much joy and satisfaction. I encourage everyone to step away from their hectic schedules and discover the therapeutic magic of baking. You might surprise yourself with the delicious outcomes, both in the kitchen and in your heart.
