Step-by-step

  • Wash down all your surfaces well and wash your hands.
  • Sterilize the equipment you will be using (I use the fluid that you get for sterilizing babies' bottles) including what you will be fermenting the cream in.
  • Take a clean saucepan and add the double cream.
  • Over a low heat and stirring all the time, bring the cream to almost boiling point. If you have a thermometer, aim for around 70 degrees C.
  • Once it reaches this temperature, remove from the heat, place a cover on the saucepan and place into a bowl of cold water.
  • Leave for about 10-15 minutes or until the thermometer reads 30 - 40 degrees C.
  • Remove 4 desert spoonfuls of your active yoghurt and place it in whatever you wish to make your yoghurt in (a jar, the bowl from a yoghurt maker, a wide-neck flask...).
  • Pour a little of the warm cream into the yoghurt and stir well, removing any lumps.
  • Pour a little more cream in and repeat to ensure you have a smooth consistency.
  • Add the remaining cream into the mixture and mix well.
  • Place the cream mixture in your chosen warm place and leave for 24 hours.
  • Once the time is up, remove from the heat and place in the fridge until fully chilled.

My Journey to the Perfect Creamy Yoghurt

As a busy working mom, finding time for anything beyond the daily grind can feel impossible. But lately, I've rediscovered the joy of simple pleasures, and making my own yoghurt has become one of them. It started with a desire for healthier options for my family – less sugar, more natural goodness. It quickly evolved into a passion project, a little slice of mindful calm in my hectic schedule.

The first few attempts were, shall we say, an adventure. I followed online recipes religiously, yet my results were wildly inconsistent. Sometimes the yoghurt was too tart, other times it remained disappointingly runny. The internet is a vast ocean of advice, and navigating it for something as seemingly straightforward as yoghurt-making can be overwhelming. I learned to trust my instincts, to pay attention to the subtle changes in texture and temperature, to allow for improvisation. That's the beauty of cooking, isn’t it? The ability to adjust, to experiment, and to create something uniquely your own.

This particular recipe, for a dreamy, creamy yoghurt, is my perfected version. It's incredibly simple, requiring only a few ingredients and minimal equipment. The process itself is surprisingly therapeutic – the gentle stirring, the anticipation of the slow transformation, it's a small ritual that brings a sense of peace into my day. The satisfaction of creating something delicious and healthy from scratch is unparalleled. And the best part? The taste! The creamy texture, the subtle tang – it's a far cry from the store-bought varieties, bursting with artificial flavors and preservatives.

Beyond the immediate reward of delicious yoghurt, this journey has taught me patience and precision. It's a reminder that even in the midst of chaos, small moments of intentionality can bring remarkable results. The process isn’t just about making yoghurt; it's about nurturing a connection to food, to the process of creation, and to myself. The simple act of making my own yoghurt is a form of self-care – a quiet rebellion against the hurried pace of modern life, a small way to reclaim control and savor the present moment.

I encourage you to try this recipe. It's more than just a recipe; it's an opportunity to slow down, connect with your inner chef, and create something truly special for yourself and your loved ones. The creamy texture is heavenly, especially in homemade smoothies or simply enjoyed with fresh fruit and a drizzle of honey. It’s a versatile blank canvas for culinary creativity. But more than that, it’s a reminder of the simple joys that can be found in the everyday.

Making yoghurt is not just about following a set of instructions; it’s a journey of discovery. Each batch is a testament to the subtle nuances of temperature and time, of the interaction between cream and active cultures. It’s a lesson in patience, in trusting the process, and in finding satisfaction in creating something beautiful and delicious from simple ingredients. The journey of making this perfect, creamy yoghurt has been a rewarding one, filled with unexpected lessons and delightful surprises. It is a journey I encourage everyone to embark on – a journey of culinary exploration, of mindful creation, and of delicious results.

This simple recipe has become a treasured part of my routine, a daily affirmation of the power of intentionality and the joy of creating something delicious and healthy from scratch. I’m no culinary expert, just an ordinary woman finding her rhythm in the everyday, one creamy, dreamy yoghurt at a time. So give it a try; you might just find that the journey is as rewarding as the destination.

Beyond the technicalities of making yoghurt, this experience has given me a deeper appreciation for the simple pleasures in life. It's a reminder that sometimes, the most satisfying things are the ones that require a little patience and a lot of love. The quiet moments spent stirring the cream, the anticipation of the finished product, and the ultimate satisfaction of enjoying a bowl of homemade yoghurt – these are the moments that truly enrich our lives.
