It's not just a recipe; it's a testament to the magic that can happen when simple ingredients are brought together with a touch of creativity.

The initial inspiration came from a random browse through my overflowing recipe folder. I had a bag of tortillas staring back at me from the pantry, along with a half-used jar of salsa and a medley of colorful vegetables begging to be used. The idea of a casserole sparked – a warm, cheesy hug in a dish. The beauty of this recipe lies in its adaptability. It’s a blank canvas for your culinary imagination. Feel free to adjust the vegetables based on what's fresh and in season. One night, I might add diced bell peppers and zucchini; another night, it could be spinach and mushrooms. The final sprinkle of chili flakes, oregano and black pepper is a simple touch that elevates the dish to new heights. Baking the casserole in the oven is the final act, the warmth transforming the ingredients into a cohesive, flavorful whole. The aroma filling the kitchen is enough to make anyone's mouth water.
