Step-by-step

  • Place roast in crockpot.
  • Sprinkle 1 tsp salt over one side of the roast. Flip it over and sprinkle the other side of the roast with the remaining 1 tsp of salt.
  • Then add garlic, oregano, and thyme evenly over the meat.
  • Tuck the onion quarters, carrots and potatoes around the roast.
  • Add ½ cup beef stock/water and turn on low for 8 hours or high for 5 hours.
  • After time has elapsed, remove roast, potatoes and carrots from crockpot and place on a platter to cool.
  • To make a gravy, strain your liquid still in the crockpot with a fine mesh strainer. Set strained liquid aside.
  • In a small saucepan, melt 2 T. butter over medium heat.
  • Add 2 T. flour of choice and whisk to create a roux. Cook for 1-2 minutes. (See Note below for gluten free version)
  • Add reserved strained liquid to roux, whisking to prevent lumps.
  • Simmer until thickened. Taste test and adjust seasonings if needed.
  • Slice your roast and serve with hot gravy and vegetables on the side.
  • Note: For gluten free gravy, add strained gravy to a small saucepan. Heat until beginning to bubble. Make a slurry with cornstarch or arrowroot powder and a small amount of water. Pour into hot liquid and whisk until thickened. Season with salt and pepper. Arrowroot does best when added right at the end. It can lose thickening power the longer it cooks.

This Slow Cooker Roast, Potatoes, and Carrots recipe is a perfect example. It's incredibly simple to prepare, requiring minimal hands-on time. You can use any cut of beef roast – chuck roast, sirloin tip, or even a less expensive cut will work wonderfully. The slow cooking process tenderizes even the toughest cuts, resulting in a melt-in-your-mouth experience.

The vegetables are equally as delightful. The potatoes absorb all the delicious flavors from the roast and the gravy, becoming incredibly soft and flavorful. The carrots add a touch of sweetness and vibrant color to the dish. And the homemade gravy? Don't even get me started! It's rich, savory, and incredibly easy to make. The best part? It’s easily customizable to your preferences. Want a thicker gravy? Simply add a little more flour or cornstarch. Prefer a different herb profile? Feel free to experiment with rosemary, sage, or even a touch of paprika.
