Step-by-step

  • Place a medium size non-stick pan over medium-high heat.
  • Spray the pan with cooking spray (I prefer avocado oil) and add ½ cup fresh spinach to the pan.
  • Sauté the spinach until it is wilted.
  • Once the spinach is wilted, pour the liquid egg whites over the spinach, sprinkle with onion powder, garlic salt, and black pepper.
  • DO NOT STIR EGGS. I found it easier to make the eggs, omelet style.
  • Once they are almost set, fold one side over the other and continue cooking until they are fully set.
  • You can flip them if one side starts to brown too much before they are done cooking.
  • If you break them, it’s okay, just try to keep them in as big of pieces as possible, this makes them easier to eat in the quesadilla.
  • While the eggs are cooking prepare the tortilla. (See note for GF tortilla.)
  • Line tortilla with shredded or sliced cheese.
  • When the eggs are fully set, transfer to the tortilla and fold the tortilla in half to cover the eggs.
  • Spray the pan again and place the quesadilla on the pan until both sides are browned and cheese is melted.
  • You will need to flip it to brown both sides!
  • Once both sides have reached your desired crispiness and meltiness level it’s ready!
  • Be careful it will be hot, I like to serve mine with guac and salsa to cool it down (temperature wise) and because, guac and salsa, duh.

My Go-To Healthy Breakfast: The Spinach and Egg White Quesadilla

Mornings can be hectic, especially when you're juggling work, family, and trying to maintain a healthy lifestyle. Finding a quick, nutritious breakfast that doesn't sacrifice taste is a constant struggle. But I've discovered a game-changer: the healthy breakfast quesadilla. It's become my weekday staple, and I'm excited to share the recipe and why it's become such a lifesaver.

This isn't your average greasy, cheesy breakfast quesadilla. Oh no, this one is packed with goodness! Spinach provides a boost of vitamins and minerals, while egg whites offer lean protein to keep you feeling full and energized. The cheddar cheese adds a touch of creamy indulgence without overpowering the other flavors. Best of all, it's incredibly quick to prepare. I can usually whip one up in under 10 minutes, which is crucial on those crazy mornings when I'm running late. The best part? You can easily adapt it to your dietary needs. Gluten-free? Just swap out the tortilla for a gluten-free alternative. Want to add some extra veggies? Feel free to throw in some diced bell peppers or onions.

The simplicity of this recipe is what makes it so appealing. There's no complicated chopping or precise measurements needed. Just a handful of ingredients and a quick sauté. The process itself is therapeutic. The sizzle of the pan, the aroma of the cooking spinach and eggs...it's a small but satisfying ritual that starts my day on a positive note. And the taste? It's surprisingly delicious. The combination of savory spinach, fluffy egg whites, and melted cheddar is simply perfect. A sprinkle of garlic salt and onion powder adds a little extra flavor punch. I often serve mine with a dollop of guacamole and salsa for an extra layer of freshness and flavor, but it's equally satisfying on its own.

Beyond the convenience and nutritional value, this breakfast quesadilla is a testament to the power of simple, wholesome ingredients. It reminds me that healthy eating doesn't have to be complicated or time-consuming. It's about finding those quick, easy recipes that nourish your body and satisfy your taste buds. It's about making small changes that make a big difference in your overall well-being. And for me, this quesadilla is a perfect example of that.

I've found that having a quick and easy breakfast routine has dramatically improved my mornings. I'm less stressed, more energized, and better equipped to tackle whatever the day throws my way. This simple quesadilla is more than just a breakfast; it's a cornerstone of my healthy lifestyle and a testament to the fact that even the busiest of mornings can still accommodate a delicious and nutritious meal.

So, if you're looking for a healthy, delicious, and convenient breakfast option, I highly recommend giving this Spinach and Egg White Quesadilla a try. It's a true game-changer, and I'm confident it will quickly become a favorite in your household.
