Step-by-step

  • Add one can of Cream of Chicken soup to the bottom of your Crockpot, spread around.
  • Sprinkle 1/2 of the diced onions and carrots on top of the soup.
  • Layer with chicken breasts and add water.
  • Spread the remaining can of soup over the chicken breasts.
  • Add butter, placing chunks all over the top of the soup.
  • Add the remaining onion and carrots.
  • Sprinkle ground pepper and Rosemary over the entire top of the Crockpot.
  • Place the lid on and cook on high for 5 hours (This time may vary according to your Crockpot).
  • Take the chicken out and shred. (I use my Kitchenaid mixer with the dough hook; it shreds chicken in a couple of minutes.)
  • Add shredded chicken back into the Crockpot and stir.
  • Stir in milk.
  • Cut uncooked biscuits into 4 pieces each, add all cut pieces into the Crockpot, and stir well.
  • Replace the lid and cook for 1 more hour, or until the center of the biscuits are cooked through.

My Go-To Comfort Food: Crockpot Chicken & Dumplings

As a busy mom, finding time to cook a delicious and comforting meal can feel like a monumental task. Between school runs, work deadlines, and the never-ending cycle of laundry, the thought of spending hours in the kitchen often feels overwhelming. That's why I've become a huge fan of slow cooker recipes – they're my secret weapon for weeknight dinners that taste amazing without sacrificing my sanity (or my precious free time!). This Crockpot Chicken & Dumplings recipe is a perfect example. It’s incredibly easy, requires minimal prep, and results in a hearty, flavorful dish that the entire family will love.

The beauty of this recipe lies in its simplicity. You simply layer the ingredients – chicken, soup, vegetables, and butter – into your slow cooker, set it, and forget it. The slow cooking process allows the flavors to meld together beautifully, resulting in tender, juicy chicken and fluffy, melt-in-your-mouth dumplings. I love that I can throw this together in the morning before heading off to work or school, and come home to a warm, inviting aroma filling the house. It’s the epitome of effortless comfort food.

What sets this recipe apart, in my opinion, is the addition of fresh herbs, particularly rosemary. A touch of rosemary adds an earthy, aromatic depth to the dish that elevates it above your average chicken and dumplings. I also use pre-cut matchstick carrots for convenience. If you're pressed for time, don't hesitate to take shortcuts where you can; the focus should be on enjoying the process and the delicious result.

One of my favorite things about slow cooker meals is the versatility. This recipe can easily be adapted to your preferences. Feel free to add other vegetables, such as peas, corn, or green beans. You could also experiment with different herbs and spices to create your own unique twist. The possibilities are endless!

Beyond weeknight dinners, this Crockpot Chicken & Dumplings recipe is also perfect for meal prepping. I often make a double batch and freeze portions for those busy days when I simply don't have the energy to cook. Simply omit the milk and biscuits when freezing; add them towards the end of the cooking time when you are ready to serve. This way, you always have a comforting, home-cooked meal on hand.

Whether you're a busy professional, a stay-at-home mom, or simply someone who appreciates delicious, easy meals, this Crockpot Chicken & Dumplings recipe is a must-try. It's a guaranteed crowd-pleaser that will become a staple in your kitchen. Give it a try, and let me know what you think!

Tips and Variations:

  • For a richer flavor: Use chicken broth instead of water.
  • Add some spice: Include a pinch of cayenne pepper or a dash of hot sauce.
  • Make it creamy: Stir in a dollop of sour cream or cream cheese at the end.
  • Add some greens: Stir in a handful of chopped spinach or kale during the last 30 minutes of cooking.
  • Use different biscuits: Experiment with different types of biscuits, such as buttermilk biscuits or homemade biscuits.

This recipe truly embodies the spirit of comfort food: it's simple, satisfying, and perfect for sharing with loved ones. Enjoy!
