Step-by-step

  • Line a grill tray with aluminum foil and cut through the aluminum foil where the trays drain holes are so that any remaining fat can run through to the bottom tray.
  • Remove the rind and any excess fat from the chops and place on the tray.
  • Trim the excess fat from the rind, leaving only a very small amount on, then cut along the length of the rind at about 1/4 inch intervals.
  • Place the rind on the tray at the front and sprinkle lightly with salt.
  • Turn the grill to high and cook the chops for 8 to 10 minutes, keeping a close eye on the rind as it will be cooked before the chops.
  • If the rind starts to curl, it will need to be cut into sections so it lays flat, when crackled remove from the tray and lay on paper towels.
  • Turn the chops and cook for a further 8 minutes.
  • If the tray is not large enough to hold everything then you can cook the rind either before or after cooking the chops.
Grilled Pork Chops with Crackling: A Weeknight Winner

My Go-To Grilled Pork Chops with Crackling

As a busy working mom, finding time to cook a delicious and satisfying meal can often feel like a Herculean task. Weeknights are especially challenging, juggling work deadlines, homework help, and the ever-present demands of family life. But even amidst the chaos, I refuse to compromise on a good meal. That's why this recipe for grilled pork chops with crackling has become a staple in our home. It's surprisingly easy, relatively quick, and always delivers on flavor and texture. The satisfying crunch of the crackling perfectly complements the juicy tenderness of the pork, creating a dish that everyone in the family enjoys.

The beauty of this recipe lies in its simplicity. There's nothing fussy or complicated about it, and the ingredients are readily available at any grocery store. I usually pick up the pork chops on my weekly shopping trip, and then it's just a matter of prepping them before dinner. The whole cooking process, from prepping to plating, takes less than 30 minutes, which is a huge win in my book. Even better, the leftovers make a fantastic lunch for the next day, saving me even more time during the busy week.

Why this recipe is a lifesaver:

  • Quick and easy: Perfect for busy weeknights.
  • Delicious and satisfying: The crackling adds a delightful crunch.
  • Versatile: Pairs well with various sides, such as mashed potatoes, roasted vegetables, or a simple salad.
  • Budget-friendly: Pork chops are a relatively inexpensive protein source.
  • Minimal cleanup: The foil-lined grill tray makes cleanup a breeze.

Serving suggestions:

I always serve my grilled pork chops with crackling with a medley of sides. Mashed potatoes are a classic choice, providing a creamy contrast to the crispy pork. Roasted vegetables, such as asparagus, broccoli, or carrots, add a vibrant touch of color and nutrients. And if you're feeling extra fancy, a simple apple sauce or gravy adds another layer of flavour.

Tips and tricks for success:

  • Don't be afraid to experiment with seasonings. Adding herbs like rosemary or thyme can elevate the flavor profile.
  • Keep an eye on the crackling. It can burn easily, so it's important to monitor it closely.
  • If you don't have a grill tray, you can cook the pork chops directly on the grill, but be careful not to overcook them.
  • Let the pork chops rest for a few minutes after cooking before slicing into them. This allows the juices to redistribute, resulting in a more tender and flavorful chop.

This simple recipe has become a family favorite, and I hope it becomes one of yours too. It’s a testament to the fact that delicious, home-cooked meals don't have to be time-consuming or complicated. Even on the busiest of weeknights, you can put a satisfying and flavorful meal on the table with minimal effort.

So, the next time you're looking for a quick and easy weeknight dinner that's sure to impress, give this recipe a try. I guarantee it will become a regular in your cooking repertoire.
