Step-by-step

  • Preheat your oven to 170°C/338°F on the regular bake setting. Do not use the thermofan/convection oven setting.
  • Sift flour, cinnamon and salt together in a large bowl and set aside.
  • Place the butter in the bowl of your standing mixer. Microwave the butter on high until it is fully melted and simmering (about 2-3 minutes).
  • Add 50 g of the white chocolate (reserve 10 g for later), 30 g Nutella, white sugar and demerara sugar to the hot butter. Swirl and jiggle the bowl so that all the sugar is submerged in the butter.
  • Return the butter and sugar to the microwave for a further 30 seconds.
  • Mix in your standing mixer with the paddle attachment on low speed to incorporate the sugar into the butter. You need the sugar to dissolve just a little bit until the sugar sticks to the paddle when you lift it out. This takes about 20 seconds of mixing.
  • Add the eggs, apple cider vinegar and vanilla extract to the butter and sugar mixture. Mix on low speed just till the egg yolks are broken.
  • Add the sifted dry ingredients to the bowl and mix on low speed for about 20-30 seconds.
  • Scrape down the sides of your bowl and the paddle attachment. Some sneaky bits of flour often hide in the nooks and crannies.
  • Proceed to mix on medium-low speed for 3 minutes. This makes the batter nice and smooth and helps to improve the chewiness of the blondie.
  • Line a 27 cm x 17,5 cm (7 inch x 10,5 inch) brownie pan with non-stick baking parchment. Make sure that it overlaps on the sides – this will make it extremely easy to remove the Nutella Blondies from the pan later. (An 8 x 8 inch brownie tin will also work just fine.)
  • Pour the batter into the prepared tin. Smooth the batter out into the corners and sides of the tin with a rubber spatula. The batter will be quite liquid.
  • Sprinkle the leftover 10 g finely chopped white chocolate all over the surface of the blondies. The heat of the batter should be enough to melt the chocolate. Once melted, spread the melted chocolate into the surface of the batter, making sure to cover all the batter along the sides and in the corners as well. This will create a shiny crust on top of your blondies.
  • The batter needs to firm up a bit at this point, so pop it in the fridge for 10 minutes.
  • In the meantime make the Nutella swirl mixture. Beat the cream cheese and egg together with a hand mixer in a small mixing bowl. It will thicken up slightly after about 30 seconds of beating.
  • Add the Nutella, vanilla extract and salt to the bowl.
  • Sift the cocoa powder into the bowl.
  • Mix these ingredients together on low speed until combined.
  • Remove your blondies from the fridge.
  • Spoon decent dollops of the Nutella mixture over your blondies about 1 inch (2,5 cm) apart.

The crust on the blondies will crumble a bit in this process, but do not fear, the shiny crust will still be there after you’ve baked the Nutella Blondies.
  • Now it is obviously important that these guys are not overbaked. Bake them in the top third of your oven at 170°C (338°F) for 30–35 minutes, turning halfway through baking.
  • Start testing them after 30 minutes just to be safe. Ideally there should be a few sticky crumbs stuck to the testing pin, then they are ready.
  • Leave them to cool in the tin for at least one hour. They may then be removed from the tin and left to cool for a further 2 hours.
  • Cut your Nutella Blondies as you desire! They are very rich and decadent, so smaller portions will be great as well.
