Step-by-step

  • In a small measuring cup, add warm water (approx. 80 degrees), sugar and yeast. Let sit until yeast starts to bubble and activate.
  • Pour into the bowl of a stand mixer fitted with the dough hook. Add 2 cups of flour, salt, butter and garlic powder.
  • Turn the mixer on and mix until dough starts to come together. Add remaining dough and mix until all the dough pulls away from the sides of the bowl.
  • Cover and let rise for 1 hour or until doubles in size.
  • Preheat oven with cooking stone inside to 450 degrees.
  • On a well-floured surface roll dough into a 16 inch circle. Transfer to a well-floured pizza paddle.
  • Place the pieces of cheese stick around the edge of the dough and pull the edges of the dough over the top of the cheese stick and press to seal. (If the dough is having trouble sticking, wet the dough with additional butter to let it stick).
  • Assemble your pizza by spreading sauce, cheese and desired toppings over the top.
  • Mix melted butter and garlic powder together and brush the edges with the butter.
  • Gently transfer the pizza from the paddle onto the hot stone. Bake for 10-14 minutes.
  • Remove the pizza from the oven. Let cool slightly and slice in 8 pieces.

My Go-To Weeknight Dinner: Homemade Stuffed Crust Pizza

As a busy working mom, finding time to cook a delicious and satisfying dinner can often feel like a Herculean task. Between school pick-ups, after-school activities, and the never-ending cycle of laundry and chores, the thought of spending hours in the kitchen can be overwhelming. But I've discovered a secret weapon in my fight against weeknight dinner dilemmas: homemade stuffed crust pizza. Yes, you read that right – homemade. And no, it's not as difficult as you might think. In fact, it's become a surprisingly easy and enjoyable way to create a crowd-pleasing meal that even the pickiest eaters will devour.

The beauty of this recipe lies in its versatility. It's a blank canvas for culinary creativity. One night, it might be a classic pepperoni and cheese, satisfying the cravings of my pizza-loving family. Another night, I might experiment with a more adventurous topping combination, perhaps roasted vegetables and goat cheese for a sophisticated twist. The possibilities are endless, limited only by the contents of my refrigerator and my family’s ever-changing preferences. And the best part? The kids help with the assembly! It’s become a fun family activity, and their little hands are surprisingly adept at spreading sauce and strategically placing pepperoni slices. This shared experience transforms a simple weeknight meal into a cherished family memory.

The process itself is surprisingly straightforward, even for those who consider themselves kitchen novices. The dough comes together quickly, thanks to my trusty stand mixer. I let it rise while I attend to other tasks, making the most efficient use of my time. The stuffing of the crust with cheese is a simple, yet satisfying step, offering a delightful surprise with every bite. Baking the pizza is the final flourish, the aroma filling my kitchen with the delicious promise of a warm, cheesy dinner. I often find myself pausing to appreciate the golden-brown crust and bubbling cheese, a testament to the joy of creating something delicious from scratch. The satisfaction of preparing a homemade meal that is both tasty and satisfying is immeasurable. It’s a small act of love, a way to nourish my family with something more meaningful than a quick takeout order.

But the benefits extend beyond the delicious meal itself. Making pizza from scratch is a wonderful opportunity to teach my children valuable life skills. They learn about measuring, mixing, and following instructions, building confidence in the kitchen. It fosters a sense of pride and accomplishment, knowing they played a part in creating something delicious. It also encourages healthy eating habits, allowing me to control the ingredients and avoid unnecessary additives and preservatives often found in store-bought pizzas.

Beyond the practical aspects, there’s a profound sense of connection that comes with preparing a meal for your loved ones. It’s a way to express care and nurture, a simple act of love that speaks volumes. It's about more than just feeding my family; it’s about creating a warm and inviting atmosphere, a space where we can connect and share our day. And the cleanup, while admittedly not the most glamorous part, is made easier by the shared experience of making the pizza together. The mess is a small price to pay for the joy and connection we share around the dinner table.

So, the next time you're looking for a satisfying and relatively easy weeknight dinner, give my homemade stuffed crust pizza recipe a try. It's more than just a meal; it’s an opportunity to create memories, teach valuable life lessons, and nourish your family with love and delicious food. The time spent in the kitchen is an investment in family time and lasting memories, a reminder that even amidst the chaos of daily life, there’s always time for a little homemade magic.

This recipe has become a staple in our home, a comforting constant amidst the ever-changing tides of family life. It’s a testament to the power of simple ingredients, a little bit of effort, and the immeasurable joy of sharing a delicious homemade meal with the people you love most. And that, my friends, is priceless.
