  • Preparing Time: 30 minutes
  • Total Time: 40 minutes
  • Served Person: 3

Step-by-step

  • First, take your eggs and crack them in a bowl. Take a normal saucepan and a little bit of oil and get the oil hot. Add a pinch of salt and then take a fork and beat the eggs and when its all liquid put it on the saucepan let it cook. Dont burn the egg.
  • After its finished, set it aside for now in the same bowl you used to beat the eggs.
  • Take the pot and add the 1/4 oil inside it. Let it get hot at medium high temp on the stove.
  • Right after add the white cooked rice. Mix it around for 1 minute.
  • After that add the veggie stir fry sauce. Make sure its enough for all the rice stir it around for 2 minutes.
  • Add the vegetables all in.
  • Now you should make sure that the vegetables are being stirred around if they are frozen make sure theres no ice on the vegetables at this point turn the heat to low not off but low.
  • Stir constantly so it doesnt burn.
  • Take some time and cut the egg into 10 pieces and drop it all in the pot.
  • Now add all the sauces and the salt and pepper and the butter one at a time in the pot and stir for 10 min.
  • Now we are almost done. Add the lemon or lime by squeezing the juice in. Stir for another 5 min and if you want to add anything then be my guest go right ahead.
  • Turn the stove off.
  • Start stirring in the cilantro.
  • Now just take some of the rice put it in a bowl and there you go. I hope you enjoy! I didnt tell how many minutes to stir for cuz im not how long it would take for other people on average it should be around 40 min.

Grain Selection and Moisture Control

Swapping freshly cooked grains for day-old cold rice fundamentally changes the final texture by preventing a sticky, gummy pan. Spread warm grains onto a sheet pan and refrigerate them uncovered for at least four hours to dehydrate the outer starches before cooking. High heat is essential here, so preheat your cooking vessel over medium-high until the metal radiates noticeable warmth before introducing any fat.

Historical Origins of Preservation

Rooted in Sui Dynasty China, this technique originally functioned as a practical method to utilize leftover grains and mixed proteins without waste. Traditional cooks relied on a seasoned wok to impart a distinct smoky flavor known as wok hay, created when oil vaporizes against searing metal surfaces. Modern home kitchens replicate this effect by working in small batches to maintain pan temperature rather than overcrowding the cooking surface.

Avoiding Common Pitfalls

Crowding the pan remains the absolute fastest way to ruin texture, causing ingredients to steam instead of fry. Introduce liquid seasonings slowly down the interior sides of the pan rather than directly onto the grains so the moisture evaporates instantly.
