Step-by-step

  • Blend dry ingredients with shortening with a pastry cutter.
  • Stir together egg and water, then add to shortening mix.
  • Refrigerate at this point if you are ready to use.
  • When ready, mix with clean hands, then divide dough into thirds.
  • Lay out, one third at a time, on parchment paper sprinkled with flour.
  • Flatten by hand some, then sprinkle with flour and place another sheet of parchment paper on top.
  • Roll out until thin.
  • Remove one piece of parchment, then gently lift remaining piece and flip into pie dish.
  • Repeat this process. (If you wish you can make a third crust too).
  • Roll out the remaining dough, then cut out as many cookies as you can using your favorite cookie cutter.
  • Place on a cookie sheet layered with parchment paper.
  • Sprinkle with cinnamon and sugar and bake until brown to taste.
  • Eat warm or cooled! I’d suggest refrigerating. They won’t keep as long as regular cookies.
Pie Crust Cookies: A Sweet Treat from My Kitchen

Pie Crust Cookies: A Deliciously Unexpected Twist

Baking is my happy place. It's a ritual, a comforting routine that allows me to escape the everyday hustle and bustle. While I enjoy the classics – chocolate chip cookies, brownies, and the like – I'm always on the hunt for unique recipes, something that adds a little 'oomph' to the usual afternoon tea. That's how I stumbled upon this incredible pie crust cookie recipe. It's a delightful surprise, a playful marriage of two familiar treats, creating something entirely new and utterly delicious. The initial thought of using pie crust dough to make cookies might seem a bit unconventional, even daring. But trust me, this recipe is a game-changer, delivering a taste sensation that's both satisfying and unexpected.

The beauty of this recipe lies in its simplicity. The ingredients are readily available, and the process is surprisingly straightforward, even for a novice baker like myself. The result? These cookies offer a delicate, buttery crumble that melts in your mouth. They boast a delightful hint of sweetness, balanced perfectly with a subtle savory note. The addition of cinnamon and sugar is a stroke of genius, enhancing the overall flavor profile and creating a textural contrast against the crisp, delicate cookie base. I love how versatile these cookies are – they're equally enjoyable warm, straight from the oven, or served slightly chilled, allowing the flavors to deepen and settle.

What I particularly appreciate about this recipe is its versatility. Feel free to experiment with different cookie cutters, creating fun shapes to suit any occasion. You could even add various spices or extracts to customize the flavour – a dash of vanilla, a hint of almond, or perhaps even a sprinkle of nutmeg would all work wonderfully. Imagine presenting these charming cookies at your next gathering—they're guaranteed to be a conversation starter, a delightful surprise for everyone. Whether you are a seasoned baker or a complete beginner, this recipe is a must-try.

Beyond the Baking:

Baking is more than just following a recipe; it's an act of love and creativity, a way of sharing joy and warmth with others. For me, creating these cookies was not just about satisfying my sweet tooth but also about enjoying the process itself. The rhythmic motions of kneading the dough, the satisfying scent of baking spices filling the air – these are the moments that bring me peace and contentment. And sharing these treats with family and friends? That's the sweetest reward of all.

These cookies are my little contribution to the world, a small act of sweetness in a world that sometimes feels overwhelmingly harsh. I hope that these cookies bring a little sunshine into your day, and that the joy I found making them is something you can experience as well.
