Step-by-step

  • Pre-heat your oven to 350F/180C/Gas Mark 4. Set aside a baking tray or oven-safe dish.
  • Start by making the Taco Bean filling, by adding oil to a saucepan, over a low-medium heat, add the onion and bell pepper and saute for 5-10 minutes until softened, then add the garlic clove and stir through for a minute.
  • Next, stir through the tomato paste and then the seasoning until combined in the mixture.
  • Then add your spinach with a splash of water to wilt it, stir through and let wilt for a few minutes before adding the canned beans. Stir through and set aside.
  • Next, place the seasoned Seitan Strips in a dish, cover loosely with foil and bake until firm and crisp (I used my air-fryer for 15 minutes, so adjust accordingly).
  • Meanwhile, make the Creamy Cheeze Sauce, by combining all the ingredients in a blender and blend until completely smooth, then heat a saucepan with a tbsp. oil and add the mixture, let it sit until the edges begin to bubble slightly, then give it a stir round the edges with a spatula. Let cook for a further few minutes, then set aside whilst you make the Guacamole.
  • Make the Guacamole at the latest point to avoid browning; simply place all the ingredients in a food processor and process to desired consistency (I like mine smooth for this recipe).
  • Then assemble the tacos, place some bean filling in the bottom and then top off with the cooked Seitan Strips, and place in the oven for 3-5 minutes until warmed and crisp.
  • Remove from the oven, and add a few generous spoonfuls of Creamy Cheezy Sauce and Guacamole, and scatter with fresh coriander and spring onions, if desired.
  • Serve ½ Tacos per person, with some side-salad.

The key to a great taco is, of course, the meat. While the recipe calls for steak, you can easily substitute ground beef, chicken, or even vegetarian options like seitan or mushrooms. The creamy sauce is a delightful surprise, adding a luxurious element to a typically casual dish. It's a simple blend of pantry staples, requiring minimal effort but delivering maximum flavor. I love to add a little extra zing with some chopped jalapenos, but feel free to adjust the heat level to suit your preference. The guacamole, a classic taco companion, adds a vibrant freshness that perfectly complements the richness of the creamy sauce and the savory steak. I usually make a large batch and use it throughout the week on salads, sandwiches, and even as a simple dip with tortilla chips.

One of my favorite things about this recipe is how easily it can be scaled up or down. It’s perfect for a weeknight dinner for two or a larger gathering with friends. The leftovers are also fantastic, making it a great meal-prep option. Just reheat the tacos and enjoy them for lunch the next day. The creamy sauce is even better reheated, the flavors deepening and intensifying. I often double the sauce recipe just to have extra on hand for future meals. And let's face it, who doesn't love leftover creamy sauce? It's practically a dip waiting to happen.

Making these tacos is a delightful experience. I love the process of prepping the ingredients, mixing the flavors, and assembling the tacos.
