Step-by-step

  • Heat oil in a large, heavy-based saucepan on high. Cook sausage pieces for 1-2 mins each side until brown. Drain on kitchen paper.
  • Cook bacon and onion in same pan for 5 mins on medium heat until onion is soft. Add garlic and paprika and cook for 1 min. Add tomato and stock and bring to the boil. Return sausages to pan and simmer on low for 10 mins.
  • Add vegetables and simmer uncovered for 20 mins. Stir through parsley. Serve with steamed rice.
