Step-by-step

  • For making the mango pulp, use 1 medium size ripe mango which will give you approx. 1 cup of mango pulp. De-skin the mango and cut them into pieces. Blend well to make puree and set aside.
  • In a pan, add 1/4 cup (60ml) of ghee and heat slightly. Add the cashews, pistas and the rava together and saute in low-med heat.
  • Keep roasting the rava-dry fruit-ghee mixture constantly to avoid burning. You will see the rava turning to light golden in 4-5 minutes. A good indicator would be to watch the color of the cashews. When the cashew turns golden, remove from flame, and set aside the mixture.
  • Take a 2 liter pressure cooker, and add the white sugar. Add the mango puree/pulp on top of the sugar. You can also add food coloring of choice or 1/4 teaspoon turmeric for a nice yellow color. Now, add 1 cup of water and stir up lightly.
  • Close the pressure cooker, fix the weight and cook at med-high flame 1100w in induction for 1 whislte exactly. After 1 whistle which approximately takes 3-4 minutes, release the pressure manually.
  • Now, open the cooker and add the roasted rava mixture into the boiling sugar-mango pulp water. And give it a quick stir. Close the pressure cooker immediately and fix the whistle and set it aside for 20 minutes. Do not open the cooker to check before 20 minutes.
  • After 20 minutes, open the cooker and mix up the contents well. Mango Kesari is ready to be served !

Tips and Variations:

Mango Selection: The riper the mangoes, the better the flavor. Look for mangoes that are slightly soft to the touch.

Ghee (Clarified Butter): The use of ghee adds a rich, nutty flavor. If you don't have ghee, you can substitute it with butter, though the flavor will be slightly different.

Spice it up: A pinch of cardamom powder can add a warm, aromatic touch to the dessert.

Serving Suggestions: Serve the Mango Kesari warm or cold, garnished with chopped nuts or a drizzle of honey for extra flavor.

Make it ahead: The Mango Kesari can be made ahead of time and stored in the refrigerator for a few days. Reheat gently before serving.
