Step-by-step

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mix together the cake mix, eggs, oil and vanilla extract.
  • Using an electric mixer, mix on low until dry ingredients are mixed in and then bump up to medium speed for two minutes. Batter will be super sticky.
  • Drop large spoonfuls of batter 2 - 3 inches apart onto greased cookie sheets.
  • Bake for 10-14 minutes...you'll have to keep an eye on your cakes and baking time will honestly depend on the size spoonful you added. When in doubt stick a toothpick in the center of a whoopie pie and when it comes out clean, it's done.
  • Let cook for 2 minutes on cookie sheet and then move to a wire rack to cool entirely.
  • In a small pan, add in sugar, flour and salt. Gradually add milk and mix into ingredients.
  • Stir and bring to a boil, continuing to stir for 1-2 minutes as mixture thickens.
  • Stir in milk chocolate chips until completely melted.
  • Transfer to a small bowl and place covered in refrigerator until completely cool (1-2 hours).
  • In a large bowl, beat Crisco and butter until fluffy.
  • Add in chocolate mixture and vanilla extract and mix completely.
  • Either pipe filling onto one cookie or use a knife. Place second cookie on top of filling.
  • OPTIONAL - sprinkle chocolate jimmies on the outside of the filling.
  • Store whoopie pies in fridge AND if you have to stack them, make sure you have a parchment layer between whoopie pies or they will stick together!

Double Chocolate Whoopie Pies: A Sweet Treat for Any Occasion

As a busy working mom, time is always of the essence. Finding quick and easy recipes that still deliver delicious results is a constant quest. That's why I'm thrilled to share my go-to recipe for Double Chocolate Whoopie Pies – a decadent dessert that's surprisingly simple to make, even on a hectic weeknight. These aren't your average whoopie pies; they're intensely chocolatey, rich, and incredibly satisfying, perfect for a family gathering, a potluck, or even just a quiet moment of self-indulgence.

The beauty of this recipe lies in its simplicity. It starts with a trusty chocolate cake mix, cutting down on prep time significantly. I’ve always been a fan of using cake mix as a base because it provides a consistent foundation for countless variations and customizations. From there, the recipe comes alive with a homemade chocolate filling, adding a touch of elegance that store-bought versions simply can't match. The creamy texture of the Crisco and butter in the filling pairs beautifully with the soft, slightly cakey texture of the whoopie pie itself. The slight salty edge from the filling balances the intense sweetness of the chocolate wonderfully. The whole thing is a symphony of textures and flavors that will leave you wanting more.

The process is incredibly straightforward. The cake batter comes together quickly, and baking time is relatively short. The real magic lies in the homemade chocolate filling. Making it from scratch takes a bit more time than just using pre-made frosting, but trust me, it's worth every minute. The rich, smooth filling elevates the whoopie pies to a whole new level. The process of making this filling was initially daunting, but I was surprised by how easily it all came together. I’ve learned to embrace using readily available quality chocolate chips for convenience and consistency of taste.

Beyond the simple steps and incredible taste, these whoopie pies are remarkably versatile. Feel free to experiment with different types of chocolate chips, add nuts, or even drizzle them with extra chocolate ganache for an even more indulgent treat. I've personally tested them with both semi-sweet and dark chocolate chips – both were delicious in their own way and offer unique flavor profiles for you to explore. The addition of chocolate jimmies adds a delightful textural contrast and visual appeal, making them perfect for presenting to guests.

One thing I particularly appreciate is the ease of storing these whoopie pies. I usually keep them refrigerated to maintain their freshness, which ensures the filling stays smooth and creamy, and that they will last for several days, preventing any unnecessary waste. But even if you do make a few more than expected, they are perfect for sharing, and trust me, there will always be someone eager to grab an extra.

Making these Double Chocolate Whoopie Pies has become a cherished ritual in our home. It's a reminder that even amidst the whirlwind of daily life, there's always time for a little sweetness and a whole lot of love. The smiles on my kids' faces when they see these little treats are worth more than any stress relief. I hope this recipe brings as much joy to your kitchen as it does to mine.

So, grab your mixing bowls, gather your ingredients, and get ready to create a batch of Double Chocolate Whoopie Pies that will leave everyone asking for more. It's a recipe that's simple enough for a beginner baker yet satisfying enough for the most experienced chocolate connoisseur. Happy baking!
