In-Law Chicken

This recipe is based on the original Engagement Chicken from Glamour magazine. After finding nothing particularly remarkable about it, I modified it slightly into a simple but elegant recipe that will impress even the stuffiest in-laws. The lemony flavored pan juices make an out-of-this-world gravy. This recipe will make even the most timid cook look like a pro!

Step-by-step

  • Place rack in lower third of oven and preheat to 425 degrees.
  • Wash chicken inside and out with cold water, remove the giblets, then let the chicken drain, cavity down, in a colander until it reaches room temp (about 15 minutes). Pat dry with paper towels.
  • Pour lemon juice all over the chicken (inside and outside). Season with salt and pepper.
  • Prick the whole lemons three times with a fork and place deep inside the cavity. (Tip: If lemons are hard, roll on countertop with your palm to get juices flowing.)
  • Place the bird breast-side down on a rack in a roasting pan, and bake uncovered for 30 minutes.
  • Lower temperature to 375?. Remove chicken from oven and turn it breast-side up (use wooden spoons!); return it to oven until done (thermometer pops up, or dark meat registers a temperature of 160F).
  • Test for doneness; a meat thermometer inserted in the thigh should read 160 degrees, or juices should run clear when chicken is pricked with a fork.
  • Let chicken rest with a foil tent for 15 minutes before carving.
  • While chicken is resting, scoop solid fat from roasting pan into a medium saucepan. Add an equal amount of Wondra (or other) flour and mix well over medium heat. When thickened, add remaining juices from bottom of roasting pan, and enough flour to thicken.
  • Serve chicken with gravy.

In-Law Chicken: A Simple Recipe to Impress

Let's be honest, family gatherings can be a mixed bag. There's the joyous reunion, the laughter, the stories...and then there's the pressure. The pressure to be the perfect hostess, to create a meal that not only nourishes but also wows. As a busy working mom, I don't have time for complicated recipes that require hours of prep and meticulous attention. I need something elegant, delicious, and, most importantly, easy. That's where this In-Law Chicken recipe comes in.

I stumbled upon a recipe called "Engagement Chicken" in a magazine once, but honestly, it felt a bit underwhelming. So, I took the basic concept and tweaked it to create something truly special. This isn't just a roast chicken; it's an experience. The fragrant lemon juice infuses the chicken with a bright, zesty flavor, while the pan juices transform into a luscious gravy that's rich and intensely flavorful. It's a recipe that elevates the simplest of ingredients into a truly memorable meal.

I remember the first time I made this for my own in-laws. I was nervous, of course. My mother-in-law is a fantastic cook, and I was determined to impress her. The aroma that filled the kitchen as the chicken roasted was heavenly – a blend of lemon and herbs that promised a culinary delight. When I finally carved the chicken, the juicy, tender meat fell off the bone with ease. The gravy, rich and creamy, was the perfect complement to the perfectly cooked chicken. The compliments flowed, and I felt a wave of relief wash over me. I had done it! I had created a meal that was worthy of my in-laws, a meal that even my experienced mother-in-law enjoyed.

What makes this recipe so exceptional is its simplicity. It's a dish that even a novice cook can master, yet it produces results that rival those of a professional chef. The secret lies in the careful attention to detail – from properly prepping the chicken to letting it rest before carving. This allows the juices to redistribute throughout the meat, ensuring a succulent, incredibly tender result. The addition of lemons is a stroke of genius. It not only adds a burst of refreshing acidity, but it also infuses the chicken with a captivating aroma that fills the kitchen with deliciousness. And, of course, don't underestimate the power of that delicious lemon-infused gravy. It’s the perfect final touch, a rich and savory sauce that elevates the entire meal.

Beyond the ease of preparation and the spectacular outcome, this In-Law Chicken recipe also offers versatility. Feel free to experiment with the herbs and spices. Add some fresh rosemary or thyme to the cavity for a more robust flavor profile. Or, if you prefer a spicier kick, add a pinch of cayenne pepper to the lemon juice marinade. The possibilities are endless! For a more complete meal, serve it with roasted vegetables, a simple green salad, or your family's favorite side dishes. No matter how you choose to serve it, this In-Law Chicken is sure to become a staple in your culinary repertoire.
