Step-by-step

  • Season ribs with Mrs. Dash and brown in a saute pan.
  • While ribs are browning, pour chicken broth in pressure cooker and bring to a boil. Place 2 or 3 ribs in cooker and sprinkle with some soup mix. Continue to add ribs as they brown and sprinkle with the rest of the soup mix. Do not use any salt as the broth and soup mix will add plenty.
  • Put the lid on pressure cooker and seal. Bring up to a boil and then back heat off to normal cooking.
  • Sauté mushrooms in the pan the ribs were in. Season with garlic powder. Add mushroom soup and clean can out with about 1/3 can of water. Add to mushrooms and blend. Keep on low heat.
  • When ribs have cooked for 1 hour and 15 minutes, pressure down in the sink with cold water. Remove ribs, be careful, the bones will fall out.
  • Take about 2 or 3 cups of the cooking liquid and mix into mushrooms. This is a very flavorful sauce or gravy you can use for many things, but it goes great with the ribs!!

Tender and Tasty Pressure Cooker Pork Ribs: A Simple Weeknight Delight

As a busy working mom, finding time to cook delicious, healthy meals can sometimes feel like a Herculean task. Weeknights are a whirlwind of homework, extracurricular activities, and the constant juggling act of keeping everyone happy and fed. But that doesn't mean I have to compromise on flavor or nutrition. This pressure cooker pork ribs recipe is my go-to for a weeknight win, a flavorful and comforting meal that's surprisingly simple to make, even on my busiest days.

The beauty of this recipe lies in its simplicity and speed. The pressure cooker does all the heavy lifting, tenderizing the ribs to perfection in a fraction of the time it would take in a conventional oven. I love the convenience; I can throw everything into the cooker, and while the ribs are simmering, I can focus on other tasks – tackling the mountain of laundry, helping with homework, or even just stealing a few precious minutes of quiet time to sip my tea. No more hours spent hovering over a stove! This recipe truly frees up my evenings, allowing me to spend more quality time with my family, not stuck in the kitchen.

The rich, savory flavor of these ribs is something else. The combination of Lipton Onion Mushroom soup mix, cream of mushroom soup, and a touch of Mrs. Dash creates a depth of flavor that's simply irresistible. The mushrooms sautéed in the leftover rib juices transform into a luscious gravy that perfectly complements the tender meat. It’s the kind of meal that brings everyone to the table – even my picky eaters are clamoring for seconds! Serving these ribs is a guaranteed crowd-pleaser, and the compliments I receive always make the effort (or lack thereof!) feel worthwhile.

Beyond the Weeknight Win: This recipe isn't just for busy weeknights. It's perfect for casual weekend gatherings, potlucks, or even a special family dinner. The leftovers are equally delicious, making it an incredibly versatile dish that continues to give. I often repurpose the leftover gravy as a base for pasta sauce or a delicious addition to mashed potatoes. The possibilities are endless!

Making it Your Own: One of the best things about this recipe is how adaptable it is. Feel free to experiment with different seasonings to suit your taste. A dash of paprika or a pinch of cayenne pepper could add a nice kick. You can also substitute different types of mushrooms or add other vegetables like carrots or celery to the gravy for extra flavor and nutrients. The beauty of cooking is in its experimentation. So don't be afraid to tweak the recipe and make it your own!

This pressure cooker pork ribs recipe is more than just a meal; it's a testament to the power of simplicity and efficiency in the kitchen. It’s a recipe that allows me to balance the demands of my busy life while still providing my family with delicious, home-cooked meals. It’s a win-win, and that's what truly matters.
