Step-by-step

  • Bring the water to a boil and add the raw ground beef. Stir until the beef is separated. Don’t brown the meat first! You want the meat to really separate.
  • Add the rest of the ingredients. Reduce heat and simmer, uncovered, for 2 to 3 hours, or until thickened.
  • If you are eating it right away, use a ladle to skim the fat towards the end of the cooking time. Otherwise, cool and refrigerate overnight; the chili is actually better the second day. Skim off any accumulated fat and reheat the chili. Almost always served over cooked spaghetti.
  • Serve with any or all of the following accompaniments: finely grated cheddar cheese (3-way), chopped raw onion or/and cooked kidney beans (4-way with one, 5-way with both), and (sacrilege) oyster crackers on the side.
Tim's Cincinnati Chili: A Taste of Ohio

My Cincinnati Chili Adventure: A Home Cook's Quest

As a busy working mom, finding time to cook delicious and satisfying meals can be a real challenge. Weeknights are a whirlwind of school pickups, homework help, and the ever-present struggle to balance work and family life. But even amidst the chaos, I crave those moments of culinary creativity, those opportunities to bring my family together around a table laden with home-cooked goodness. This Cincinnati chili recipe is one such triumph. It's a recipe that manages to be both surprisingly simple and remarkably flavorful—perfect for a busy weeknight.

I’ve always been fascinated by regional specialties, those dishes that embody the unique culinary heritage of a particular place. Cincinnati chili has long held a special place on my list of culinary adventures. It's not your typical chili; it's a unique blend of sweet, spicy, and savory flavors that I knew I had to try. My journey began with countless online searches, pouring over different recipes, each promising that "authentic" Cincinnati chili experience. I experimented, I tweaked, I tasted, and I learned a lot along the way.

The ingredient list might seem daunting at first glance—a long list of spices and pantry staples—but don’t let that intimidate you. The actual cooking process is surprisingly straightforward. The key is to let the chili simmer slowly, allowing those flavors to meld and deepen. The longer it simmers, the more intense and rich the flavor becomes. This is one recipe where patience truly pays off. I started by following recipes religiously, sticking to the measurements precisely. But soon, I discovered the joy of customizing the chili, adding a little extra of this spice, or a dash more of that ingredient. Over time, this recipe has evolved to reflect my personal preferences, while still maintaining that Cincinnati-style soul.

One of the most surprising things I discovered about this chili is how much better it tastes the next day. The flavors seem to deepen and meld even more during the chilling process. The next day, I served it over spaghetti, piled high with a generous helping of shredded cheddar cheese, creating a Cincinnati chili three-way. The rich, savory chili perfectly complements the simple pasta, and the cheddar cheese adds a sharpness that cuts through the sweetness of the spice blend. It’s a combination that's truly addictive.

The possibilities are endless when it comes to serving this chili. My kids, especially, love adding their own personal touch. They go for the "five-way", adding both onions and kidney beans, making it a hearty and filling meal. I’ve had some great experiences making this dish for friends and family who are just amazed by the depth and complexity of flavors. It's become a staple for family gatherings and potlucks, and it's a great way to introduce people to the unique charm of this Ohio classic.

This Cincinnati chili isn’t just a recipe; it’s a story of culinary exploration and family togetherness. It’s a reminder that even in the midst of a busy life, there is always time for creating something delicious and meaningful. It’s the perfect dish to warm you up on a cold night, or to share with friends and loved ones on any occasion. I hope this recipe brings as much joy to your kitchen as it has brought to mine. So gather your ingredients, put on some music, and get ready to embark on your own Cincinnati chili adventure! You won't regret it.
