Step-by-step

  • Preheat oven to 375 convection.
  • Dice one small to medium onion and 2 carrots. Try to keep the carrots no thicker than 1/2 inch.
  • Clean and cut two skinless boneless chicken breasts into 1/2 to 3/4 inch cubes. If you have one of those huge breasts, one will do.
  • Use a large pan over medium high heat with 2 t oil. Add chicken. Add the onion and cook until onion is clear and chicken can be easily broken with a wooden spoon. About 10 minutes.
  • While chicken cooks, mix 1/2 cup milk with 2/3 cup of flour and mix well. I'm using a Tupperware shaker but you could whisk in a bowl.
  • When the chicken is cooked, move it to a bowl and set aside. Leave as much of any liquid in the pan and the onion doesn't matter if it stays with the liquid.
  • Add one 14 oz can chicken broth, 1/2 tsp salt and 1/4 pepper. Bring to a boil over medium high heat then decrease to medium.
  • Slowly add the milk/flour mixture while whisking continuously. Continue to whisk until thickened about 2-3 minutes.
  • Add the chicken and veggies to the gravy and simmer while you get your pie crust ready if not done already.
  • Add the mixture to the pie crust. Cover with a second crust. Pinch the edges together and vent.
  • Bake and after about 20 minutes protect the edge of the the crust with aluminum foil to prevent burning.
  • Bake for about total 40 minutes until golden brown. Let set for 5-10 minutes before serving.

A Comforting Classic: My Simple Old Fashioned Chicken Pot Pie

There's something undeniably comforting about a warm, savory chicken pot pie. The flaky crust, the creamy filling, the tender chicken – it's the perfect meal for a chilly evening or a cozy weekend brunch. And while some recipes can seem intimidatingly complex, this Simple Old Fashioned Chicken Pot Pie is surprisingly straightforward. Even on a busy weeknight, it's a dish I can whip up and still enjoy some quality family time.

My love for chicken pot pie started, not surprisingly, in my own kitchen. Growing up, we didn't have fancy restaurant meals, but we did have heartwarming, home-cooked fare. My mom's chicken pot pie wasn't gourmet, but it was love in a bowl. The aroma filling the house as it baked, the satisfying crunch of the crust, the rich flavor of the filling – it was a taste of home and family. Years later, after much trial and error, I perfected my own version, drawing inspiration from my mom's recipe and adding a few personal touches along the way.

What makes this recipe particularly special is its simplicity. No exotic ingredients or complicated techniques needed. Just basic pantry staples and a little bit of time. The chicken filling is rich and flavorful, with a perfectly balanced blend of herbs and spices. I use simple chicken broth, rather than fancy stocks or cream, and find it delivers all the flavor I need. The vegetables—carrots and onions—add sweetness and texture. And I love using frozen peas for their convenience and bright, fresh flavor. They’re always ready to go which is helpful on busy days.

The secret to a truly great chicken pot pie is the crust. I've tried various crusts – homemade and store-bought – and honestly, for the sake of time, I love using store-bought pie crusts. They are convenient and reliable. I usually use a well-known brand like Pillsbury, as they are always a reliable option to save precious time. I’ll let you in on a little trick, though: to prevent burning around the edges, I cover the crust with aluminum foil during the last part of the baking process. It’s a simple trick, but it works wonders in achieving that perfectly golden-brown crust every time!
