Step-by-step

  • Preheat oven to 350°F.
  • Line a 9x9 inch pan with foil and spray with cooking spray.
  • Cream butter and 1/3 cup powdered sugar in the bowl of a stand mixer (or using a hand mixer).
  • Add 1 teaspoon vanilla and mix, scraping the bowl a few times to make sure that the butter and powdered sugar are completely incorporated.
  • Mix in salt and flour until combined. It will take a few moments to turn from crumbly into an actual dough. Just keep mixing until it does.
  • Press dough into the prepared pan, like a crust.
  • Bake for 14-18 minutes, until the shortbread is no longer shiny or translucent. It won’t brown very much, if at all.
  • Let cool completely before the next step.
  • Mix peanut butter, 1/2 cup powdered sugar, and 1 teaspoon vanilla with a hand mixer.
  • Spread evenly over the top of the cooled shortbread.
  • Melt chocolate chips and shortening in a microwave-safe bowl. (Heat on high in 30-second increments, stirring between each, until melted and smooth.)
  • Spread over the top of the peanut butter layer.
  • Important: it was cold in my house when I made these bars. I let them set and the chocolate harden on the counter. If you must chill them to set the chocolate, make sure you let them come up to room temperature before cutting so that the chocolate doesn’t break. The peanut butter is smooth and does not harden, so if the chocolate is too hard the peanut butter layer will smoosh out while cutting. Letting the bars harden overnight on the counter shouldn’t be a problem, unless it’s summer and very warm in your house.

My Unexpected Culinary Adventure: Tagalong Bars and the Joys of Baking

As a busy working mom, my kitchen often feels more like a battlefield than a haven of culinary creativity. Between juggling work deadlines, school pick-ups, and the never-ending laundry pile, finding time for anything beyond quick, easy meals feels like a luxury. But there's a quiet joy I find in baking, a kind of meditative escape from the chaos of daily life. It's not about following complex recipes or creating elaborate masterpieces; it's about the simple act of measuring ingredients, combining them, and transforming humble components into something delicious and comforting.

This Tagalong Bar recipe, discovered quite by accident while browsing a food blog (and subsequently refined to my family's preferences), became a recent revelation. The original recipe called for various ingredients I didn't have on hand, so I made a few substitutions and tweaks. The result was a surprisingly easy and incredibly satisfying treat. The shortbread base, perfectly crumbly and sweet, is the perfect canvas for the creamy peanut butter layer, offering a luscious texture. The rich, dark chocolate topping completes the experience with its intense flavor and satisfying snap. The bars were the perfect combination of sweet, salty, and indulgent.

What I loved most about this recipe was its simplicity. No special equipment was needed – just a mixing bowl, a baking pan, and a willingness to embrace the slightly messy process. It’s the type of recipe that's perfect for a weeknight baking session, allowing you to create a delightful dessert without a significant time commitment. The kids even helped with some steps, making the whole process a fun family activity, which is a bonus given our hectic schedules.

Making these Tagalong Bars felt like a mini-vacation from the everyday grind. The aroma of baking chocolate and peanut butter filled my kitchen, creating a warm and inviting atmosphere. The process of measuring ingredients, mixing, and spreading the layers felt therapeutic. It was a welcome break from the usual pressures of work and family life. And of course, the result was a delicious treat that was thoroughly enjoyed by the entire family. The kids devoured them almost immediately, and my husband even confessed to sneaking a few for himself.

I've made a few adjustments since my first attempt. I found that using a slightly higher ratio of peanut butter added to the overall richness of the bars. Also, I experimented with different types of chocolate chips, eventually settling on a semi-sweet option that complements the sweet peanut butter layer without overpowering it. The shortbread base is remarkably versatile, and it can be adjusted to accommodate different flavour preferences – perhaps adding chopped nuts, dried cranberries, or even a dash of cinnamon for a more complex flavor profile.

So, if you're looking for a simple yet satisfying dessert recipe that's perfect for busy individuals or families, I highly recommend trying these Tagalong Bars. They're surprisingly easy to make, requiring minimal effort and ingredients, yet the end result is a treat that's both delicious and impressive. It's a small act of self-care, a reminder that amidst the whirlwind of daily life, there's always time for a little bit of sweetness, even if it’s just a simple, homemade dessert.

More than just a recipe, the process of making these bars has become a small ritual. It's a moment of quiet reflection, a time to escape the day's demands, and a way to create something beautiful, delicious, and uniquely mine. It's proof that even in the midst of the chaos, there's always room for a little bit of baking joy.

This recipe is a keeper, and it will undoubtedly become a staple in our home, a sweet reminder of the simple joys of baking and the importance of creating small moments of happiness within the everyday.
