Step-by-step

  • Steam or boil the cauliflower & garlic: Bring a large pot of water (or broth) to a boil. Break the florets into large chunks and boil the cauliflower and peeled garlic for about 5-8 minutes. Strain from pot (save the water!) and place in blender.
  • Add 1 cup cooking liquid and blend until mostly smooth.
  • Add 2 cups cheese and blend until smooth.
  • Add mustard and salt and blend until combined. Adjust taste as desired.
  • Bring the liquid back to a boil and cook the pasta for about 7-8 minutes, or until al dente. Drain and set aside.
  • Heat a large skillet over medium-high heat. Remove the sausage from the casing and crumble. Brown in pan until cooked through.
  • Add the spinach and cook just until wilted.
  • Bake the casserole: Add the pasta, sausage, and spinach to a large oven-safe dish and stir well.
  • Add the cauliflower sauce and mix, then top with the remaining cheddar cheese.
  • Bake at 350°F for 10-15 minutes.
  • Serve!

Sausage and Spinach Cheddar Casserole: A Weeknight Winner

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like a Herculean task. But believe me, it doesn't have to be! This Sausage and Spinach Cheddar Casserole is my go-to recipe on those hectic weeknights when I need something both satisfying and relatively quick to prepare. The best part? It’s incredibly versatile and easily adaptable to whatever ingredients I have on hand.

The beauty of this casserole lies in its simplicity. It's a one-pan wonder, minimizing cleanup and maximizing flavor. The creamy cauliflower sauce provides a surprising richness, perfectly complementing the savory sausage and the fresh spinach. The whole wheat pasta adds a hearty texture, making it a complete and satisfying meal. I often add sautéed mushrooms or sun-dried tomatoes for extra depth of flavor, or whatever vegetables are looking a little sad in my crisper drawer. Honestly, the possibilities are endless!

I started making this casserole a few years ago after a particularly stressful week at the office. I needed a meal that was comforting yet didn't require hours of slaving over the stove. This recipe fit the bill perfectly. Since then, it's become a family favorite, requested by my kids almost weekly. It's also incredibly adaptable—perfect for a casual weeknight dinner or even a slightly fancier get-together with friends.

Tips and Variations:

  • Sausage Swap: Feel free to experiment with different types of sausage. Italian sausage, chorizo, or even vegetarian sausage would all work wonderfully.
  • Cheese Please: Sharp cheddar is my personal preference, but Monterey Jack, Gruyere, or a blend of cheeses would also be delicious.
  • Veggie Boost: Don't be afraid to add extra vegetables! Roasted red peppers, zucchini, or broccoli florets would all be welcome additions.
  • Spice it Up: For a little kick, add a pinch of red pepper flakes to the cauliflower sauce or the sausage mixture.
  • Make it Ahead: You can assemble the casserole ahead of time and bake it just before serving. This is perfect for meal prepping or entertaining.

This Sausage and Spinach Cheddar Casserole isn't just a recipe; it's a testament to the fact that healthy and delicious meals don't have to be complicated. It's a quick, easy, and satisfying dish that's perfect for busy weeknights and adaptable enough to become a staple in your own kitchen. Give it a try – you won't be disappointed!
