Step-by-step

  • Preheat oven to 400 degrees.
  • Pulse the San Marzano tomatoes in a blender or food processor until chopped and chunky.
  • Heat olive oil in a large pot over medium heat. Add the halved onion to the pot and cook for 2-3 minutes.
  • Pour in the tomato sauce and toss in the basil leaves.
  • Bring to a boil over medium-high heat.
  • Reduce heat and simmer for 25 minutes or until sauce has thickened.
  • Use a slotted spoon to scoop out the yellow onion and basil leaves and discard them.
  • Rice the cauliflower by adding to a food processor and pulsing 10-15 times. You can also grate the cauliflower florets with a grater (this will just take longer).
  • Cook the cauliflower in the microwave for 4-5 minutes on high.
  • Let cook and squeeze excess water from the cauliflower by pressing between paper towels.
  • Add cauliflower to a large bowl. Add in eggs, 1 1/2 cups mozzarella cheese, dried basil, garlic powder, and red pepper flakes and stir to combine.
  • Pour cauliflower batter into a well-greased spring-foam pan (I used a spring-foam tart pan).
  • Use the back of a spoon to press and smooth the crust into the pan, being sure to push the crust up the sides of the pan to form edges.
  • Bake for 30 minutes or until golden brown and set.
  • Remove from oven.
  • While the crust bakes, wilt the baby spinach in a pan over medium heat with a little bit of salt.
  • Top the crust with 2 cups mozzarella cheese, spinach, and sauce (add as much sauce as desired).
  • Bake for another 15 minutes or until cheese is melted and bubbling.
  • Let stand 5-10 minutes before slicing.
  • Slice, serve and enjoy!

My Journey to a Healthier, Tastier Chicago Pizza

As a busy working mom, finding time to cook healthy and delicious meals can be a real challenge. My kids are obsessed with pizza, but the usual delivery options are heavy on the grease and light on the nutrition. I knew there had to be a better way. That's when I embarked on my mission to create a healthier, lighter version of our family favorite: Chicago-style deep dish pizza. I wanted something that would satisfy those deep-dish cravings without the guilt, something I could feel good about serving my family. And let me tell you, this journey was as rewarding as the final slice.

The traditional Chicago pizza, with its thick, buttery crust and generous layers of cheese and toppings, is undeniably delicious. But the calorie and fat content can be overwhelming. My quest began with replacing the traditional dough. I experimented with various alternatives, from whole wheat dough to zucchini crusts, but nothing quite captured the textural satisfaction of a deep dish until I discovered cauliflower. Cauliflower, with its mild flavor and ability to mimic the texture of dough when properly prepared, became my secret ingredient. The process was an adventure itself. I initially struggled with getting the cauliflower crust to the right consistency; too wet and it would become soggy, too dry and it would crumble. But through trial and error, I perfected the method, achieving a crust that was both light and satisfyingly substantial. The key, I found, was to properly rice and squeeze out the excess moisture from the cauliflower before incorporating the egg and cheese.

But the crust was only the beginning. I wanted to maintain the integrity of the classic Chicago pizza while reducing the overall heaviness. This meant carefully selecting my ingredients. I opted for a lighter mozzarella cheese, using a brand known for its lower fat content. For the sauce, I used San Marzano tomatoes, known for their rich flavor and sweetness, making it unnecessary to add a lot of extra sugar or seasonings. And then, of course, there was the spinach – a nutrient-packed addition that provides a beautiful contrast to the rich tomato sauce and creamy cheese. The result was a pizza that was astonishingly delicious and remarkably healthier.

The recipe itself is surprisingly straightforward, despite my initial struggles. While the process may seem lengthy, it's remarkably manageable, especially if you use a food processor for ricing the cauliflower. It's a rewarding experience, and the pride of creating something delicious and healthy from scratch is unmatched. The look on my kids' faces when they tasted this pizza was priceless – they didn't even realize it was a healthier version. And that, my friends, is the ultimate success for any mom cook.

Beyond the immediate gratification of a healthier family dinner, this journey has taught me the importance of mindful cooking. It's about understanding ingredients, experimenting with flavors, and making conscious choices to nourish my body and my family's. It's not about deprivation, but about creating delicious food that supports a healthy lifestyle. And this cauliflower crust Chicago pizza is a testament to that principle – it is delicious, it is healthy, and it's a recipe I plan to enjoy for years to come. I encourage you to try it; it's a journey worth embarking on.

This pizza is more than just a meal; it's a testament to the power of healthy eating and the joy of cooking for those you love. It’s about finding a balance between indulgence and wellness, a balance that allows us to savor the flavors of life without sacrificing our health. So, gather your ingredients, put on your apron, and embark on this delicious and rewarding culinary adventure. You won't regret it.
