Step-by-step

  • First marinate the chicken.
  • Start by poking holes in the chicken. Or scoring the skinless side of the chicken (You do this by making a number of shallow cuts across its surface. This technique is also useful in marinating, as it allows for better absorption of the marinade.)
  • Salt and pepper both sides of the chicken.
  • Place the chicken, marinade garlic, and balsamic vinegar in a ziploc bag. Make sure that the vinegar and garlic is completely covering the chicken.
  • Marinate the chicken for 2 to 8 hours (I usually let my chicken marinate overnight for about 8 hours.)
  • When ready to cook the chicken, take the chicken out of the marinade, salt and pepper both sides of the chicken.
  • Set the chicken aside for at least 10 minutes to allow the chicken to have an even temperature and to prevent overcooking parts of the chicken.
  • While the chicken is sitting, Preheat the oven to 375 degrees. Start getting an oven safe pan hot on a stove top using medium high heat.
  • Once the pan is hot, add a few drizzles of olive oil to the pan. Once the oil is hot add the chicken to the pan.
  • Brown the chicken on both sides for about 3 to 5 minutes.
  • Once the chicken is browned turn the heat off. Remove the chicken from the pan. Discard the residual grease that is left in the pan.
  • Add the garlic to the pan and left the hot pan heat the garlic for a few seconds.
  • Then, Add the other marinade ingredients (wine, cherries, and balsamic vinegar), and chicken into the pan.
  • Place the pan in the oven and bake the chicken uncovered for 40 to 45 minutes or until the internal temperature of the chicken reaches 165 degrees when a food thermometer is inserted into the chicken.

Roasted Black Cherry Balsamic Chicken: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Between school pick-ups, soccer practice, and endless to-do lists, the last thing I want is to spend hours slaving away in the kitchen. That's why I'm always on the lookout for recipes that are both flavorful and easy to prepare. This Roasted Black Cherry Balsamic Chicken recipe has quickly become a staple in my dinner rotation. It's surprisingly simple, requires minimal hands-on time, and delivers a burst of rich, sweet, and tangy flavors that my whole family loves.

The beauty of this recipe lies in its versatility. You can easily adjust the ingredients to suit your preferences and what you have on hand. Feeling adventurous? Swap out the black cherries for blueberries or raspberries. Want to add a little heat? Toss in a pinch of red pepper flakes. The possibilities are endless! I often use bone-in, skin-on chicken thighs, as they stay juicy and flavorful during the roasting process. However, boneless, skinless breasts would work just as well if you prefer a quicker cooking time. And don’t be afraid to experiment with different types of balsamic vinegar—a good quality balsamic will elevate the dish to new heights.

Beyond the Recipe: A Taste of Simplicity

This recipe isn't just about the delicious food; it's about the feeling of accomplishment that comes with creating a healthy and satisfying meal for your loved ones without sacrificing your precious time. It’s about the aroma that fills your kitchen, a comforting reminder of simple pleasures. It's about gathering around the table, sharing stories, and enjoying a meal that tastes like love—a far cry from the hurried, often stressful feeling of juggling work and family life.

Making Memories, One Meal at a Time

Cooking, for me, is more than just preparing food; it’s a way to connect with my family and create lasting memories. The time spent in the kitchen, even amidst the chaos of a busy week, is a chance to unwind, to be present, and to create something beautiful – something nourishing for both body and soul. This Roasted Black Cherry Balsamic Chicken is more than just a meal; it’s a symbol of that connection, a reminder of the simple joys found in creating something delicious and shared with loved ones. So, the next time you’re looking for a weeknight dinner that’s both delicious and simple, give this recipe a try. You might just surprise yourself at how much flavor you can pack into a relatively short amount of cooking time.

A Quick Tip: Don't be afraid to let the chicken marinate for longer. The longer it marinates, the more flavorful it becomes. I often marinate mine overnight for the best results. It’s a small step that makes a big difference in the final dish.

Variations:

  • Spice it up: Add a pinch of red pepper flakes to the marinade for a little kick.
  • Herby delight: Incorporate fresh herbs like rosemary or thyme into the marinade.
  • Citrus zest: Add the zest of an orange or lemon to the marinade for a bright, citrusy flavor.
  • Different fruits: Experiment with other fruits like blueberries, raspberries, or even apricots.

Enjoy! And remember, even in the busiest of lives, there's always time to create something delicious and memorable.
