Step-by-step

  • Preheat the oven to 400F.
  • Cut about ½ inch off the top of the head of garlic and place your head of garlic in a baking dish.
  • Drizzle olive oil over the cut edge and inside until it is completely filled and just starting to spill down the side.
  • Wrap the garlic in aluminum foil and roast for 35-40 minutes or until the garlic is soft in the center and golden in color.
  • Allow to cool off before removing the paper from each clove: Gently squeeze each clove out of its paper shell.
  • Peel the potatoes and cut into medium size dice.
  • Place in a medium saucepan, cover with water and boil for 10 to 15 minutes or until potatoes are soft enough to be easily crushed with a fork.
  • Drain the potatoes and add back to your pot (or a large bowl).
  • Add coconut cream, salt, pepper and about 5 cloves of roasted garlic (save the rest for dips, dressings or spreads) and mash the potatoes until smooth.
  • Add olive oil to large skillet (the biggest you have) and heat over medium heat.
  • Add onions and carrots and sauté for about 3-4 minutes or until they are slightly softened.
  • Add the garlic and cook for about 1 minute, then add mushrooms, salt and pepper.
  • Stir continuously until mushrooms start releasing their juices and sauté for 10-12 minutes.
  • Stir in tomato paste, thyme and rosemary and stir to combine.
  • Simmer and stir occasionally until the sauce is thickened, about 2-3 minutes.
  • Add frozen peas to your mushroom sauce and pour into a 1.75 quart baking dish; spread out evenly.
  • Top with your garlic roasted mashed potatoes.
  • Be sure to “seal” the edges of your baking dish with enough mashed potatoes so the filling won’t cook over.
  • Bake at 400F for approximately 30-35 minutes or until the mashed potatoes turn golden around the edges.
  • Allow your Shepherd’s Pie to cool for a few minutes before serving.
  • Enjoy!

My Unexpected Vegan Culinary Adventure: A Shepherd's Pie Story

As a busy working mom, finding time to cook healthy and delicious meals is always a challenge. Weeknights are a whirlwind of school pick-ups, homework battles, and the ever-present struggle to keep everyone fed and happy. I often find myself grabbing quick, convenient options, but lately, I've been trying to incorporate more wholesome, plant-based meals into our diet. This wasn't always easy. The thought of creating a satisfying and flavorful vegan meal for a family who loves meat was daunting. Then I stumbled upon a recipe – a vegan shepherd's pie, of all things. It promised a comforting classic, but with a twist, a delicious vegan twist.

The recipe called for wild mushrooms, which immediately intrigued me. I’ve always loved the earthy, umami flavor that mushrooms bring to a dish. The addition of coconut milk to the mashed potatoes seemed unusual, but I trusted the recipe's promise of creamy, decadent goodness. I gathered my ingredients: potatoes, onions, carrots, a beautiful array of wild mushrooms, and a can of full-fat coconut milk. I had a moment of doubt – would my family actually enjoy this? Would it taste anything like the meaty comfort food we all loved?

The Cooking Process: A Surprisingly Simple Journey

The recipe itself was surprisingly straightforward. Roasting the garlic was a simple yet effective step; it infused the entire dish with a subtle sweetness and warmth. Sautéing the mushrooms until they released their juices was a sensory experience – the aroma filled my kitchen, promising a delicious outcome. I was even able to get my youngest child involved with the simpler tasks, making it a family cooking adventure.

The mashed potatoes, infused with the roasted garlic and rich coconut cream, were truly exceptional. They were so creamy and flavorful, far surpassing any mashed potato I’d ever made before. The final step, assembling and baking the pie, was both satisfying and exciting. I carefully layered the hearty mushroom mixture and topped it with the fluffy mashed potatoes, creating a golden, rustic-looking pie.

The Moment of Truth: A Delicious Revelation

The moment we gathered around the table, the aroma filled the room once again. There were no complaints, only excited murmurs. The first bites were met with happy sighs. Even my husband, a self-proclaimed meat-lover, declared it a success. The earthy mushrooms, the sweet carrots and onions, the creamy potatoes—all the elements worked in perfect harmony. The vegan shepherd's pie wasn't just a substitute; it was a culinary adventure, a discovery of new flavors and textures.

More Than Just a Meal: A Culinary Journey of Discovery

This experience was more than just cooking a delicious meal; it was a journey of exploration, a stepping stone into a new world of plant-based cooking. It showed me the potential of vegan cuisine—its ability to create comforting classics with exciting new flavors. The vegan shepherd's pie wasn't a sacrifice; it was an upgrade. It proved that healthy and delicious can coexist, even within the busy chaos of a typical weekday evening. Now, it's become a regular feature in our meal rotation, a reminder that trying something new can lead to unexpected culinary delights.

Since then, I've experimented with other vegan recipes, and each time, the results have been surprising and delightful. My family’s palate has expanded, and we've discovered a whole new range of flavors and textures. The vegan shepherd's pie wasn't just a meal; it was a gateway to a more conscious and flavorful approach to cooking.
