Step-by-step

  • Prepare the tzatziki sauce: wash the cucumber and peel it with a small knife until you obtain all the white surface.
  • Grate the cucumber with a wide-holed grater, then pass the pulp through a colander, squeezing it to drain the vegetable liquid well.
  • Chop the cucumber further with a knife to obtain an even finer pulp.
  • Wash the fresh mint and finely chop the leaves, then chop half a clove of garlic.
  • In a bowl, pour the chopped cucumber, add the Greek yogurt and mix.
  • Then add the chopped mint and garlic, salt, oil and vinegar.
  • Thoroughly mix all the ingredients until a homogeneous mixture is obtained. Let the sauce rest in the refrigerator for half an hour covered with plastic wrap.
  • Now cook the caramelized cherry tomatoes: rinse the cherry tomatoes well under running water and cut them in half.
  • In a pan, brown half a clove of garlic with oil. When it is golden brown, add the cherry tomatoes and sauté them for 2 minutes over medium heat.
  • Add brown sugar, salt, and hand-shredded thyme to the cherry tomatoes in the pan.
  • Simmer the cherry tomatoes over low heat for about ten minutes or until they have lost almost all their water content, then turn off the heat.
  • You can replace the caramelized cherry tomatoes with confit tomatoes.
  • Continue preparing the wraps by preparing the other vegetables for the filling. Wash all the vegetables and mixed greens thoroughly. Peel the carrots and cut them finely into julienne strips.
  • Proceed with the zucchini, removing the two ends, while the cucumber, with or without the peel, should be cut in half and then into thin diagonal slices.
  • Heat the bottom of a non-stick pan over low heat and place the flatbreads without lard on one side, letting them heat for a few seconds so that they do not dry out. Then remove them from the heat and spread them with plenty of tzatziki sauce on the seared side.
  • Start filling, placing in the center of each flatbread the mixed greens, cucumbers, zucchini, and carrots as shown in the photos.
  • Add 80 g of caramelized cherry tomatoes on top of each flatbread.
  • Once the vegetables are added, cut the feta into half-centimeter cubes and add 25g to each flatbread.
  • Roll up the flatbreads to create your wraps, making sure that the ingredients do not come out.
  • In a non-stick pan previously heated over low heat, sear the obtained wraps for a few seconds on all sides. Then remove them from the heat.
  • To enjoy the veggie wraps more comfortably, you can cut them in half diagonally and serve them as desired with a little more tzatziki sauce on the side.
