Step-by-step

  • Preheat Oven to 425°F. Line rimmed baking sheet with parchment or silicone liner.
  • Place salmon in the center, skin-side-down, drizzle with olive oil and season with garlic salt and black pepper.
  • Bake uncovered for 10-15 min (depending on thickness), or just until cooked through.
  • Remove from oven, cover with foil and rest 10 min.
  • Flake salmon with 2 forks discarding skin and any bones then set aside and cool to room temp.
  • Heat a medium skillet over medium heat with 1 Tbsp olive oil and 1 Tbsp butter.
  • Add diced onion and bell pepper and saute until golden and softened (7-9 minutes) then remove from heat.
  • In a large mixing bowl, combine flaked salmon, sauteed pepper and onion, 1 cup bread crumbs, 2 beaten eggs, 3 Tbsp mayonnaise, 1 tsp Worcestershire sauce, 1 tsp garlic salt, ½ tsp black pepper and ¼ cup chopped parsley.
  • Stir to combine.
  • Form into patties (about a heaping Tablespoonful each) and mold with your hands into 2" wide by ¾ to ½" thick patties.
  • In a clean non-stick pan, heat 1 Tbsp oil and 1 Tbsp butter until hot then add salmon patties in a single layer.
  • Saute 3 to 4 min per side or until golden brown and cooked through. If salmon patties brown too fast, reduce heat.
  • Remove finished patties to a paper-towel lined plate and repeat with remaining oil, butter and salmon cakes.

My Simple Salmon Patties: A Weeknight Dinner Winner

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like a Herculean task. Weeknights are a blur of school pick-ups, homework battles, and the never-ending cycle of laundry. The last thing I want to do after a long day is spend hours slaving away in the kitchen. That's why I developed this simple salmon patties recipe – it’s quick, easy, and packed with flavor. It's become a staple in our household, a go-to meal when time is short but I still want to put something nutritious and satisfying on the table.

The beauty of this recipe lies in its versatility. You can easily adapt it to whatever ingredients you have on hand. Don't have red bell pepper? Use a different colored one, or omit it entirely. Out of panko breadcrumbs? Regular breadcrumbs will work just as well. I often change it up depending on what's fresh at the market that week. Sometimes I’ll add a squeeze of lemon juice for extra brightness, or a pinch of dill for a fresh herbal note. The basic method remains the same, and the result is always a flavorful, satisfying meal that the whole family loves.

The Salmon Story: I started making these salmon patties because I was trying to incorporate more fish into our diet. Salmon is packed with omega-3 fatty acids, which are essential for brain health and overall wellbeing. But I needed a way to make it appealing to my picky eaters, and honestly, myself too! I found myself buying pre-made fish cakes from the grocery store for a while, but they were always way too expensive and honestly not as delicious as I could make at home. That's when I set about creating this recipe, and I’ve never looked back. This recipe helps me ensure that my family gets a healthy dose of those essential nutrients, without the fuss and expense.

Beyond the Plate: These salmon patties aren't just a quick weeknight meal; they’re also incredibly adaptable. They make a fantastic addition to salads, served atop a bed of greens with a creamy dressing. I’ve even been known to sneak them into school lunches – my kids love them tucked into whole-wheat pita bread with a little bit of hummus. The possibilities are endless!

This recipe really is a testament to the power of simple ingredients. It shows that you don't need complicated techniques or exotic ingredients to create a healthy and delicious meal. Sometimes, the simplest dishes are the most satisfying. So if you’re looking for a quick, easy, and flavorful meal, give this recipe a try. I’m confident it will become a new family favorite. And remember, don't be afraid to experiment – that's half the fun of cooking!

Tips and Tricks for Salmon Patty Success:

  • Don't overcook the salmon: Overcooked salmon can be dry and crumbly. Aim for a flaky texture.
  • Use good quality ingredients: The taste of your patties will be directly affected by the quality of your ingredients. Try using wild-caught salmon if possible. Fresh herbs always add an extra something special
  • Don't overcrowd the pan: When sautéing the patties, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Adjust seasonings to your liking: Feel free to adjust the seasonings to your taste. Add more garlic salt, pepper, or any other herbs or spices you enjoy.
  • Make it ahead: These patties can be made ahead of time and stored in the refrigerator for a few days. Simply reheat them in a pan or microwave before serving.

Serving Suggestions:

  • Serve with a side of roasted vegetables.
  • Serve on a bun with your favorite toppings, for a delicious and easy salmon burger.
  • Use them as a topping for a salad.
  • Serve with a side of mashed potatoes or rice.
  • Make them into sliders for a fun party appetizer.

I hope you enjoy this recipe as much as my family does! It’s become a true lifesaver on busy weeknights, and I know it will become one of your go-to meals as well. Happy cooking!
