The easiest chicken fajitas ever! My Easy Sheet Pan Chicken Fajitas are oven baked on one tray – meaning less hands-on time, less washing up, gorgeous roasted peppers and even tastier chicken! What’s not to like?

  • Preparing Time: 15 minutes
  • Total Time: 30 minutes
  • Served Person: 4

Step-by-step

  • Preheat your oven to 220C / 200C fan / gas mark 7 / 425F.
  • Place all the marinade ingredients in a large bowl and mix together thoroughly.
  • Add the chicken and turn to coat. (Optional: leave to marinate for 1-2 hours in the fridge…or up to 24 hours if you’ve got the time!)
  • Add the peppers and onions and turn again.
  • Tip everything in the bowl out onto a large oven tray and spread out so everything is in one layer. (Tip: use two oven trays if you haven’t got one big enough.)
  • When the oven has heated up, place the baking tray in the oven and roast for 20 minutes, or until the chicken is cooked through and the vegetables are lightly charred. (To check if the chicken is cooked all the way through, choose the thickest piece of chicken and cut it in half – if it is completely white with no pink, it is cooked. And if the thickest piece is cooked, so should all the thinner ones!)
  • Wrap the tortillas in foil and place in the oven for the last 8 minutes of cooking time.
  • Remove from the oven but keep wrapped in foil until needed.
  • Sprinkle the chicken with the chopped coriander and serve in the pan on the table, together with the warm tortilla wraps and whatever extras you have chosen for people to make up their own fajitas.
  • Enjoy!

Easy Sheet Pan Chicken Fajitas: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and, most importantly, delicious. That's why I've fallen head over heels for this Easy Sheet Pan Chicken Fajita recipe. It's a lifesaver on those hectic weeknights when I'm juggling work deadlines, school pick-ups, and everything in between. Forget complicated recipes and endless cleanup – this one-pan wonder makes dinner a breeze.

The beauty of this recipe lies in its simplicity. Everything cooks together on a single sheet pan, minimizing both prep time and dishes. The chicken becomes wonderfully tender and juicy, absorbing all the flavors of the smoky paprika, zesty lime, and fragrant cumin. The peppers and onions roast to perfection, achieving that delightful char that elevates any fajita. And the best part? It’s all done in under 30 minutes. I can’t think of anything more efficient!

Why This Recipe Works:

One-Pan Convenience: The single sheet pan method drastically reduces cleanup time, a huge plus for busy individuals. No more scrubbing multiple pans after a long day!

Flavor Explosion: The vibrant blend of spices—smoked paprika, cumin, oregano, and a touch of chili—creates a complex and incredibly satisfying flavor profile that complements the chicken and vegetables beautifully.

Customizable: Feel free to adjust the spice level to your preference. Add more chili flakes for a fiery kick or reduce them for a milder dish. You can also experiment with different types of peppers— poblanos, jalapeños, or even a mix – to change the flavors slightly.

Family-Friendly: This recipe is a crowd-pleaser, appealing to both adults and children. The fajitas are easy to assemble, and everyone can customize their own with their favorite toppings.

Perfect for Meal Prep: You can easily double or triple this recipe to have leftovers for lunch the next day. It also holds up really well when reheated.

Beyond the practical advantages, this recipe is also deeply satisfying. The aroma that fills the kitchen as the chicken and vegetables roast is utterly irresistible. It’s a simple pleasure that transforms a rushed weeknight into something more comforting and enjoyable. And the compliments I get are pretty great too. It makes me feel like a culinary superstar, even if I’m just whipping up a simple meal for my family.

Tips for Success:

Marinate for maximum flavor: While not mandatory, marinating the chicken for at least 30 minutes, or even overnight, will intensify the flavor and ensure incredibly juicy chicken.

Don’t overcrowd the pan: Ensure the chicken and vegetables are in a single layer on the baking sheet to promote even cooking. Use two baking sheets if necessary.

Check for doneness: The chicken should be cooked through and the vegetables tender. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).

Warm the tortillas: Wrapping the tortillas in foil and placing them in the oven for the last few minutes of cooking time helps to keep them soft and pliable.

Serve with your favorite toppings: Get creative with your toppings! Guacamole, sour cream, salsa, shredded cheese, and chopped cilantro are all delicious options.

This Easy Sheet Pan Chicken Fajita recipe has become a staple in my kitchen. It's a testament to the fact that delicious, satisfying meals don't have to be complicated or time-consuming. It’s a celebration of simple ingredients coming together to create something truly extraordinary. It's more than just a meal; it's a quick escape from chaos and a little bit of joy in the midst of a busy day. Give it a try, and I’m sure it will become a weeknight favorite for you too!
