Low Carb Supreme Pizza Casserole

This is an adaptation of several recipes I found in some old church cookbooks. Most called for pasta, this one does not and is not missed according to my high carb eating husband. Look for pizza sauce that has no added sugars and one that is lowest in carb counts.

My Low-Carb Pizza Casserole Adventure: A Busy Mom's Culinary Triumph

Life as a working mom is a whirlwind. Between juggling deadlines at the office, school pick-ups, soccer practice, and making sure everyone gets a nutritious (and hopefully, enjoyable!) dinner on the table, finding time for anything beyond the bare minimum feels like a luxury. Cooking, for me, used to be a chore, a necessary evil to keep my family fed. But lately, I’ve rediscovered the joy of creating something delicious and satisfying, something that brings us all together at the end of a long day. And this Low-Carb Supreme Pizza Casserole is a perfect example of that.

I stumbled upon this recipe while browsing through some old church cookbooks – a treasure trove of family recipes passed down through generations. Many of them were heavy on the pasta, which, while comforting, isn’t exactly ideal for my family’s current dietary needs. We’ve been trying to cut back on carbs, focusing on healthier options. My husband, bless his heart, is a carb-lover through and through, so I was a little apprehensive about making such a drastic change. But to my surprise, and his, this low-carb version was an absolute hit! He didn't even miss the pasta. The secret? A flavorful combination of ground beef, sausage, and plenty of cheese to keep everyone happy.

The best part about this casserole is its simplicity. It's a one-pan wonder, which minimizes cleanup time—a huge plus for a busy weeknight. The process is straightforward: brown the meats, sauté the veggies, mix in the pizza sauce, layer it all in a baking dish, and top with generous amounts of cheese. The aroma that fills the kitchen while it bakes is heavenly – a savory mix of meaty goodness and melty cheese. And the taste? Let's just say it’s a fantastic alternative to traditional pizza, satisfying that cheesy, savory craving without the carb overload.

This recipe has become a staple in our family's rotation. It’s perfect for weeknights, potlucks, or even a relaxed weekend lunch. It's also incredibly versatile. Feel free to experiment with different types of meat, vegetables, and cheeses to customize it to your liking. I often add spinach or zucchini for extra veggies, and sometimes I substitute some of the ground beef with turkey for a leaner option. The possibilities are endless!

Making this casserole isn't just about the delicious meal; it's about the process. It’s about the joy of creating something from scratch, the satisfaction of feeding my family something healthy and flavorful, and the wonderful feeling of connection that comes with sharing a meal together. In the midst of a busy life, finding those small moments of connection and joy is invaluable. And this casserole, in its simple perfection, helps me find them more often.

So, whether you’re a busy mom like me, a seasoned chef, or simply looking for a quick and easy yet impressive meal, I highly recommend giving this Low-Carb Supreme Pizza Casserole a try. It's a delicious, adaptable, and satisfying dish that's perfect for any occasion. Enjoy!
