Step-by-step

  • Boil the potatoes in water for about 40 minutes until soft.
  • Clean and slice the onions.
  • Heat olive oil in a saucepan and add the onions.
  • Cover the onions with water and simmer for about 15 minutes until soft.
  • Chop the thyme, sage, and rosemary and set aside.
  • Prepare the salad: cut the cabbage in half, remove the hard central rib, and cut it into thin strips.
  • Put the cabbage in a bowl, salt it, and let it rest for about 30 minutes to soften and release liquids.
  • Wash and dry the apples, cut them in half, then into thin slices; cut each slice into strips and set aside.
  • Dry the cabbage with a cloth.
  • Prepare the salad: in a bowl, add the washed and dried spinach, cabbage, apples, yogurt, olive oil, and a few drops of Tabasco. Mix and set aside.
  • Once the potatoes are ready, put them while still hot and with their skin into a potato ricer, collecting the puree in a large bowl.
  • Add the grated cheese, chopped herbs, salt, and pepper.
  • Add the stewed onions and beaten egg, then add the breadcrumbs one spoonful at a time until you obtain a compact mixture.
  • Cut a square of parchment paper about 12 cm to the side and place it on a saucer.
  • Place a round cookie cutter with a diameter of 10 cm in the center of the paper, put the mixture inside, and press it well with the back of a spoon.
  • Carefully remove the cookie cutter.
  • Heat a pan with a drizzle of olive oil, place the burger lifting it with the paper so that it remains compact.
  • Once placed on the pan, remove the parchment paper.
  • Cook the burgers for 3 minutes on one side and 2 minutes on the other, until golden brown on the surface.
  • Serve the potato burgers immediately, hot, with the yogurt salad.

My Delicious Potato Burger Adventure

As a busy working mom, finding time to cook healthy and delicious meals can be a real challenge. Weeknights often feel like a race against the clock, leaving little room for elaborate recipes. That's why I've become a master of quick, satisfying meals, and these potato burgers are a shining example. They're surprisingly simple, packed with flavor, and easily adaptable to whatever ingredients I have on hand.

The inspiration for this recipe actually came from a recent trip to a charming little bistro in the countryside. I ordered a vegetarian burger, expecting something bland and uninspired. Instead, I was utterly blown away by the juicy, flavorful potato patty. It was the perfect blend of earthy potato, aromatic herbs, and a delightful crispy exterior. I knew right then and there that I had to recreate this culinary masterpiece at home.

The beauty of these potato burgers lies in their versatility. Feel free to experiment with different herbs and spices to create your own signature flavor profile. I often add a pinch of smoked paprika for a smoky depth or a dash of cayenne pepper for a subtle kick. And don't be afraid to get creative with the toppings! A simple arugula salad, a dollop of creamy avocado, or even a fried egg can elevate these burgers to new heights.

The secret to achieving that perfectly crispy exterior is to ensure that your potato mixture is well-seasoned and not overly moist. A light touch with the breadcrumbs is key, adding just enough to bind the mixture without making it dense. Once you've mastered the art of the perfect patty, you can experiment with different cooking methods. I often pan-fry mine in a little olive oil, but you can also bake them for a healthier alternative.

These potato burgers are not only a delicious and satisfying meal but also a great way to incorporate more vegetables into your diet. Potatoes are a good source of potassium and vitamin C, while the addition of herbs and greens provides a boost of vitamins and antioxidants. So, whether you're a busy professional, a stay-at-home mom, or simply someone who appreciates a good, quick meal, these potato burgers are a recipe you'll want to keep in your culinary arsenal.

Beyond the deliciousness, these potato burgers also offer a wonderful opportunity for family bonding. Involve your children in the cooking process, letting them help with mashing the potatoes, mixing the ingredients, or even shaping the patties. It's a fun and engaging activity that can create lasting memories, and your kids will be more likely to try and enjoy something they've helped create. What's more, the leftovers (if there are any!) can be easily repurposed into a delicious potato salad for lunch the next day.

The versatility of this dish extends beyond the individual ingredients. The basic recipe provides a solid foundation that you can easily customize to match your dietary needs and preferences. For instance, you can swap out the breadcrumbs for almond flour for a gluten-free option. Or, if you're looking for a spicier kick, you could add some chili flakes or a dash of hot sauce to the potato mixture. The possibilities are truly endless!

The bottom line is this: these potato burgers are a winner. They are flavorful, easy to prepare, adaptable to a range of tastes and dietary needs, and perfect for a quick weeknight dinner or a more relaxed weekend meal. So, gather your ingredients, roll up your sleeves, and get ready to experience the pure joy of a homemade potato burger that's as delicious as it is satisfying. Give it a try and let me know what you think! I'm sure it will quickly become a family favorite.

This recipe is a fantastic way to use up leftover potatoes, too. If you have some boiled potatoes from another meal, simply mash them up and add them to the mixture. It’s a great way to reduce food waste and save time in the kitchen. Another great tip is to prepare the patty mixture ahead of time. You can make it in the morning and then simply cook the burgers when you’re ready to eat. This is especially handy on busy weeknights.
