A Simple Weeknight Dinner: Chicken with Olives

A Simple Weeknight Dinner: Chicken with Olives

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a constant uphill battle. My days are a whirlwind of meetings, school pick-ups, and trying to squeeze in a little "me time" before collapsing into bed. So, when I discover a recipe that’s both quick and flavorful, it's a real win. This Chicken with Olives recipe is one of those gems. It’s elegant enough for a dinner party, yet simple enough for a weeknight meal after a long day. The rich, savory sauce clings beautifully to the tender chicken and pasta, and the olives add a delightful briny kick.

I love the versatility of this dish. It's easily adaptable to whatever I have on hand. Sometimes I swap out the white wine for chicken broth, or if I'm feeling adventurous, I add a pinch of red pepper flakes for a little heat. The beauty of cooking is in its adaptability, and this recipe is a perfect example. One of my favorite things is to make a double batch on Sunday and have leftovers for lunch throughout the week. Nothing beats having a delicious, homemade meal ready to grab and go in the morning. That's efficiency and deliciousness combined!

The key to this recipe's success is the simple yet effective combination of ingredients. The butter and olive oil create a rich base for the sauce, while the onions, garlic, and bell peppers build a flavorful foundation. The juicy tomatoes add sweetness and acidity, complementing the savory chicken and briny olives perfectly. The cream adds a touch of richness and helps thicken the sauce to perfection. The final result is a comforting and satisfying dish that my family always enjoys. It's a far cry from the usual takeout or frozen dinners we might resort to when time is tight. And the best part? Cleanup is a breeze!

Beyond its deliciousness, this recipe also offers a level of convenience that's hard to beat. It mostly comes together in one pan, which means less washing up at the end. Plus, the cooking time is reasonable, fitting seamlessly into even the busiest schedules. It is a perfect option when my schedule is tight but I still want to serve my family a wholesome, tasty meal. The recipe serves as a great example of how delicious, home-cooked food doesn't always have to involve hours in the kitchen.

Tips and Tricks:

  • Bone-in or Boneless? I prefer using bone-in, skin-on chicken thighs and legs for richer flavor and juicier results. However, boneless, skinless breasts will work too, just reduce the cooking time accordingly.
  • Wine Substitution: If you don't have white wine, chicken broth works well as a substitute.
  • Olive Variety: Feel free to experiment with different types of olives. Kalamata olives would be a delicious alternative.
  • Pasta Choice: Linguine is classic, but any pasta shape works well.
  • Make it a complete meal: Serve this dish with a simple side salad and a crusty loaf of bread for a complete and satisfying meal.

This Chicken with Olives recipe has become a staple in my family's weekly meal rotation. It’s a quick, easy, and delicious option that's perfect for busy weeknights. It consistently pleases my family, and I find it easy enough to replicate even on the most exhausting days. I highly recommend you give it a try! You'll agree; it's a winner.
