Step-by-step

  • Pre-heat the oven to 375°F
  • Make caramelized onions (optional and not included in cooking time): heat a wide pot or deep pan to medium heat. Throw in all of the onions and let brown for a few minutes. De-glaze with a bit of water. Do this a couple of times. Add balsamic vinegar. Turn heat down to low. Let them simmer for up to 1 hour (could just go for 15 minutes, but the longer you go, the deeper the caramelization). Check them every 15 minutes. If they're sticking to the bottom of the pot, just add a bit more water or balsamic.
  • Blend all burger ingredients (except for ½ cup of the red lentils) together until nearly smooth in your food processor. Add the rest of the lentils at the end and pulse.
  • Form the mixture into 6 patties on a parchment covered baking sheet.
  • Heat a pan to medium heat, and melt the coconut oil.
  • Fry the patties for 3 minutes on each side.
  • Place the patties on the baking sheet and bake for 30-40 minutes, flipping halfway. Go for 40 minutes if you want a dryer, stiffer patty!
  • For the last 2-3 minutes of baking, place cheese slices on the patties to melt and the sliced buns on the pan to get toasty.
  • Assemble the burger to your liking!

Red Lentil Rice Burgers: A Busy Mom's Delicious and Healthy Meal Solution

As a working mom, time is my most precious commodity. Juggling work, kids' activities, and maintaining a semblance of a social life leaves little room for elaborate cooking projects. That's why I'm always on the lookout for quick, healthy, and delicious recipes that the whole family will enjoy. These Red Lentil Rice Burgers have become a staple in our household, a true lifesaver on busy weeknights.

The beauty of this recipe lies in its simplicity and versatility. The base is a hearty blend of red lentils and brown rice, packed with protein and fiber. This provides a satisfying, filling burger without the heaviness of traditional beef. The preparation is surprisingly straightforward; I often prep the burger patties on the weekend and store them in the freezer for quick weeknight meals. Simply thaw and cook them when needed. The recipe itself is incredibly adaptable. Feel free to experiment with different toppings and sauces to suit your tastes. I've been known to add a fried egg for extra protein, or swap out the buns for a lettuce wrap for a lower-carb option.

One of the things I love most about this recipe is that it's incredibly forgiving. If you don't have all the listed spices, don't worry! Adjust to what you have on hand. The flavors still come together beautifully. The caramelized onions (optional, but highly recommended!) add a depth of sweetness that balances the earthiness of the lentils and rice perfectly. Even my picky eaters gobble these up without complaint. The recipe also allows for meal prepping. You can make a large batch of patties, and freeze them for future meals.

It's a testament to efficiency in the kitchen without compromising on flavor. Beyond the practicality, this dish is surprisingly satisfying. The texture is hearty yet moist, the flavors rich and complex. It’s the kind of meal that leaves you feeling energized and content, ready to tackle whatever the day throws your way. I've served these at potlucks, and they’re always a huge hit. They’re just as delicious cold as they are warm, making them perfect for lunch boxes or picnics. The versatility truly shines. You can switch up the toppings to suit whatever you have on hand and even swap out the buns.

The best part about this recipe is that it’s not just healthy and delicious – it's also incredibly economical. Red lentils and brown rice are budget-friendly staples, readily available at most grocery stores. This means that you can enjoy a gourmet-quality meal without breaking the bank. And that's a win in my book.

Variations and Serving Suggestions

To make these burgers even more exciting, feel free to experiment with different toppings and variations. Some of my personal favorites include:

  • Spicy Kick: Add a pinch of cayenne pepper or a dash of your favorite hot sauce to the burger mixture for a spicy twist.
  • Mediterranean Flair: Incorporate chopped sun-dried tomatoes, Kalamata olives, and crumbled feta cheese into the burger mixture.
  • Mexican Fiesta: Add some chopped jalapenos, corn, and black beans to the mix for a Mexican-inspired flavor.
  • Creamy Avocado: Mash some avocado and spread it on the burger bun for a creamy, healthy topping.
  • Sweet and Savory: Add a layer of caramelized onions and a drizzle of balsamic glaze for a delicious sweet and savory combination.

Beyond the toppings, you can also experiment with different buns. Try whole-wheat buns, brioche buns, or even lettuce wraps for a low-carb option. The possibilities are endless!
