Step-by-step

  • Pre-heat your oven to 350 degrees. Grease a couple large baking sheets with non-stick cooking spray and set aside.
  • In a medium bowl, combine the flour, cocoa powder, baking powder, baking soda and salt.
  • In a separate small bowl, combine the milk and vanilla extract. Set both aside.
  • In the bowl of your stand mixer with the paddle attachment, cream together the sugar, shortening and egg.
  • Slowly add in the dry ingredients and the milk mixture, alternating back and forth between the two, beating until the batter is well combined and smooth.
  • Scoop the batter out into mounds on your prepared baking sheets, using a scant 1/4 cup for each mound and making sure to leave a couple inches in-between.
  • Using the back of a spoon, spread the batter out into 4-inch circles. The batter will be thick and slightly sticky. Coating your spoon with a little non-stick cooking spray will help make this last step easier.
  • Transfer the baking sheets to your pre-heated oven and bake for 15 minutes. The cakes should be slightly firm to the touch when done.
  • Remove them from the oven and allow the cakes to cool on their baking sheets for 5 minutes. Then transfer the cakes to a wire rack to cool completely.
  • While the cakes are cooling, make the filling. In the bowl of your stand mixer with the whisk attachment, beat together the marshmallow creme/fluff, powdered sugar and shortening until well combined.
  • Beat in the vanilla extract. Note: I ended up doubling this filling recipe, making it in two separate batches, because I wanted a thicker layer of filling.
  • Assemble the whoopie pies. Spread some of the filling onto the flat side of one of the cakes. Top with a second cake, pressing down gently to distribute the filling evenly. Continue until all the whoopie pies are assembled.
  • Whoopie pies can be enjoyed immediately, or wrapped individually in plastic wrap and stored in your refrigerator for 2-3 days.

Classic Whoopie Pies: A Sweet Treat for Any Occasion

Oh, the joy of a perfectly baked whoopie pie! That soft, slightly cakey cookie, sandwiched between a generous helping of fluffy marshmallow cream…it's a taste of pure childhood happiness. And the best part? They're surprisingly easy to make. This recipe, a family favorite passed down through generations (or at least, through many happy baking sessions!), is my go-to for any occasion. Whether it's a casual afternoon tea, a potluck picnic, or just a little treat to brighten up a Tuesday, these whoopie pies always deliver.

I remember the first time I attempted whoopie pies. I was a young girl, maybe ten years old, perched precariously on a kitchen stool, mesmerized by the transformation of simple ingredients into something so delicious. The aroma of baking cocoa and sweet sugar filled the air, a fragrant promise of the sugary delights to come. The process itself was a journey—measuring, mixing, carefully spooning the batter onto baking sheets, and finally, the satisfying thud of the cakes hitting the cooling rack. The anticipation of assembling the pies, spreading that creamy, marshmallowy filling, was almost as delightful as the final bite.

The secret to truly amazing whoopie pies, I’ve found, lies in the details. Don't skimp on the good quality cocoa powder – it makes all the difference in the rich chocolatey flavor of the cake. And don't be afraid to experiment with the filling! While the classic marshmallow cream is unbeatable, you could easily add a hint of peanut butter, coffee, or even a touch of caramel for a unique twist.

Over the years, these whoopie pies have become more than just a recipe; they're a symbol of comfort, connection, and happy memories. They've been shared with friends, family, and neighbors, each bite a little piece of shared joy. I've watched children's eyes light up with delight as they take their first bite, and seen adults rediscover the simple pleasures of childhood with every mouthful.

Making whoopie pies is more than just baking; it's an act of love, a small gesture that can brighten someone's day. It's a reminder that sometimes, the simplest things in life are the sweetest. So, gather your ingredients, put on your apron, and get ready to create a batch of these irresistible treats. You won't regret it. And who knows, maybe you'll even start your own tradition of whoopie pie making, creating your own collection of happy memories along the way.
