Step-by-step

  • Boil the box of pasta for 5 minutes and drain
  • Brown meat in skillet and season with salt, pepper, garlic powder and Italian seasoning. Turn off heat. Add the onion and spaghetti sauce. I like to not cook the onion ahead of time, because it comes out crunchy. This is also where you might want to add other ingredients like bell pepper.
  • Start layering in crock pot: 1/2 of sauce mixture on bottom of pot, 1/2 of rigatoni, 1/2 of soup mix, sprinkling of Parmesan cheese and 2 cups of mozzarella, pepperoni in single layer
  • Repeat layering
  • Last layer should be pepperoni.
  • Set on low for 4 hours. This is for a large 6 qt slow cooker. You can scale down the ingredients and make in a smaller pot.
Crockpot Pizza: A Busy Mom's Dream Meal

Crockpot Pizza: My Go-To Weeknight Dinner

Life as a working mom is a whirlwind. Between school runs, work deadlines, and the endless to-do list, finding time for a home-cooked meal often feels like an impossible feat. That’s why I’m constantly on the lookout for recipes that are both delicious and ridiculously easy to prepare. Enter: Crockpot Pizza. This isn't your average pizza; it's a hearty, comforting pasta bake with all the flavors of your favorite pizza, but made incredibly simple thanks to the magic of the slow cooker.

I stumbled upon a similar recipe online, but I’ve tweaked it over time to perfect it for my family’s taste. The beauty of this dish is its adaptability. Feel free to get creative with the toppings! While the original recipe calls for pepperoni, you can substitute with any meat you like – sausage, bacon, ground chicken – or even go vegetarian with extra vegetables. The key is layering – creating those delicious pockets of flavor throughout the dish.

Why I Love This Recipe:

  • Simplicity: The minimal prep time is a game-changer on busy weeknights. Most of the work involves browning the meat and then layering the ingredients into the slow cooker.
  • Flavor: The combination of rich tomato sauce, savory ground beef, creamy mushroom soup, and melty mozzarella cheese is simply irresistible. The slow cooking process allows all the flavors to blend beautifully, creating a truly satisfying meal.
  • Versatility: As mentioned earlier, this recipe is incredibly versatile. Experiment with different cheeses, vegetables, and meats to create your own unique pizza-inspired pasta bake.
  • Make-Ahead Potential: You can prep the ingredients ahead of time and store them in the refrigerator until you’re ready to assemble and cook. This makes it an ideal option for meal prepping.

Beyond the Basics:

While the basic recipe is delicious as is, don't hesitate to add your own personal touch. Here are a few ideas:

  • Spice it up: Add a pinch of red pepper flakes to the sauce for a bit of heat.
  • Add some veggies: Chopped bell peppers, onions, mushrooms, or spinach would all be delicious additions.
  • Cheese variations: Experiment with different cheeses like provolone, cheddar, or even a blend of Italian cheeses.
  • Herbs and Spices: Don’t be afraid to experiment with herbs and spices. Oregano, basil, and thyme would all work well.

This Crockpot Pizza is more than just a recipe; it’s a lifesaver for busy individuals. It provides a quick and easy solution to the ever-present dilemma of what to make for dinner. So, next time you're short on time but craving a comforting and flavorful meal, give this recipe a try. I guarantee it will become a new family favorite.

Serving Suggestions:

Serve this hearty dish with a side salad or some crusty bread for dipping into the delicious sauce. It's equally satisfying on its own.

Tips for Success:

  • Don’t overcook the pasta: Boiling the pasta for just 5 minutes ensures it doesn't become mushy in the slow cooker.
  • Use a large slow cooker: This recipe is designed for a 6-quart slow cooker. If you use a smaller one, you may need to reduce the ingredient quantities.
  • Let it rest: Allow the pizza to rest for a few minutes after cooking to allow the cheese to set.

Enjoy!
