Step-by-step

  • FOR THE PASTRY
  • Cut the shortening into the flour until it resembles coarse crumbs
  • Fold in the sugar and cinnamon
  • Gradually add the wine, 1 tbsp at a time, stirring with a fork between additions.
  • Stir in the "egg" replacer.
  • If the dough is too dry to form a ball, add 1-2 more tbsp of wine (or as needed) until a ragged dough is formed.
  • Form the dough into a ball and chill for 1-2 hours.
  • FOR BAKING THE SHELLS
  • Roll out the dough very thin, about ⅛"
  • Cut out the dough the appropriate size for your tart pan.
  • Dock each round all over with a fork and press into the muffin tin.
  • Bake at 350'F for 12-18 mins (this will depend on how thin you rolled out your dough).
  • Bake until golden and quite dry and crisp.
  • Remove to a rack and let cool completely.
  • FOR FRYING THE SHELLS
  • Roll out the dough very thin, about the thickness of a dime.
  • Cut out 5" ovals (can use a cardboard cutout as a stencil).
  • Loosely wrap each oval piece of dough around the metal cannoli tube
  • Seal the edges where they overlap with a dab of non-dairy milk.
  • Deep fry in 2" of oil at 400"f.
  • Remove when golden brown all over (about 2 mins).
  • Drain on paper towels and let cool briefly before removing the metal tube/forms.
  • Let cool completely before filling.
  • FOR THE FILLING
  • In a medium bowl beat together the vegan ricotta, the vanilla, and the powdered sugar.
  • Fold in the chocolate.
  • Chill in the fridge (it will thicken as it chills).
  • TO ASSEMBLE
  • Pipe or spoon the ricotta mixture into the shells.
  • For the fried tubes, simply fill to the centre from each end.
  • Fill right before serving.

My Vegan Cannoli Adventure: A Sweet Success Story

As a busy working mom, finding time to bake is a luxury, but when I crave something truly delicious, I’m always up for the challenge. This weekend, I decided to tackle the notoriously tricky – but oh-so-rewarding – vegan cannoli. I’d seen countless pictures online, each one a perfect swirl of crispy shell and creamy filling, and I was determined to recreate that magic in my own kitchen.

The recipe I chose offered two methods for the pastry shells: baking and frying. Intrigued by the possibilities, I opted to try both! The baking process was surprisingly straightforward. Rolling out the dough was the most time-consuming part, requiring a bit of patience and a light touch to achieve the desired thinness. But the result? Perfectly crisp, golden-brown mini shells that were a delightful contrast to the luscious filling. The fried shells, however, proved to be a different beast altogether. The initial attempt resulted in slightly overdone, unevenly browned shells. After a bit of trial and error (and a few more batches), I mastered the art of deep-frying, achieving those signature airy, crunchy tubes. The texture difference between the baked and fried versions was astonishing, offering a fascinating variety of sensory experiences in one delightful treat. The aroma filling my kitchen as the shells crisped up, a blend of warm pastry and sweet cinnamon, was heavenly.

Now, onto the filling! I opted for a classic vegan ricotta, and let me tell you, it was the perfect complement to the shells. The creamy, subtly sweet filling, enhanced with a hint of vanilla and rich chocolate chips, delivered a burst of flavor with every bite. This wasn't just a dessert, it was an experience! Filling the shells was a surprisingly fun part. It’s the perfect activity for a relaxed evening, and I found that piping the mixture into the shells with a pastry bag added a professional touch. I ended up with two stunning varieties of cannoli, both bursting with deliciousness. The baked cannoli offered a more delicate, crisp shell, whilst the fried cannoli possessed a more substantial, wonderfully airy texture.

This vegan cannoli recipe is more than just a dessert; it's a testament to the power of experimentation and the joy of creating something delicious from scratch. It's a perfect recipe for a special occasion, or even just a spontaneous weekend treat. The satisfaction of creating something so beautiful and delicious far outweighs the initial effort. And the best part? It's completely vegan, so everyone can enjoy this incredible sweet treat, regardless of dietary restrictions.

Beyond the taste and texture, this culinary adventure taught me about patience, precision, and the rewarding process of mastering a new skill. It showed me that even the most daunting recipes can be conquered with a bit of perseverance and a whole lot of love. And the looks on my family's faces as they savored each bite? Priceless. So, if you're looking for a challenging yet immensely satisfying baking project, give this vegan cannoli recipe a try. You won't regret it!

Tips for Success:

  • Don't rush the dough chilling process. This step is crucial for ensuring a manageable and easy-to-roll dough.
  • For perfectly thin shells, use a pasta machine. This will ensure even thickness and prevent uneven cooking.
  • Use high-quality vegan ricotta cheese. This will make a significant difference in the overall flavor and creaminess of the filling.
  • Fill the cannoli just before serving. This will prevent the shells from becoming soggy.
  • Get creative with the filling! Experiment with different flavors and additions, such as nuts, fruits, or other spices.

This is a recipe that truly embodies the spirit of baking – a journey of experimentation, a celebration of creativity, and above all, a delightful way to share deliciousness with loved ones. So, grab your apron, gather your ingredients, and embark on your own vegan cannoli adventure. You deserve a treat!
