Step-by-step

  • Clean the apricots well, cut them in half. Remove the pits and chop them into small pieces.
  • Place in a large bowl
  • Add the remaining ingredients to the bowl and mix very well.
  • Roll out the bottom pie crust and place in the bottom of the pie plate.
  • Pour in the fruit.
  • Roll out the second crust and place on top of the pie.
  • Crimp the sides - this is to prevent the liquid from bubbling out.

My Spiced Apricot Pie Adventure: A Busy Mom's Sweet Escape

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, and keeping the house from completely imploding, finding time for myself feels like a luxury. But then, there are those moments, those stolen pockets of time, where I can escape into the comforting rhythm of baking. This spiced apricot pie became one of those escapes.

The scent of warm spices, the comforting touch of the pie crust, the vibrant color of the apricots – it's a sensory experience that grounds me, reminding me of simpler times, of family gatherings around a table laden with delicious treats. This recipe wasn’t about perfection; it was about creating something beautiful and delicious amidst the chaos. The imperfections, the slightly uneven crust, the subtle variations in sweetness – these are the charming quirks that make homemade baking so special. And the best part? The pure joy on my kids' faces when they see this pie emerge from the oven, its aroma filling the kitchen.

I chose apricots because their sunny sweetness perfectly complements the warming notes of cinnamon and a hint of rum (a little adult indulgence for this busy mama!). The spiced rum adds a depth of flavor without overpowering the delicate sweetness of the fruit. The cornstarch helps thicken the filling, preventing a soupy mess, while the lime zest brightens everything up beautifully. It's a balance of flavors and textures that I find incredibly satisfying.

Making this pie wasn't just about the end result; it was about the process. It was about finding a quiet moment in the midst of the daily rush to focus on something enjoyable. It's about creating something tangible, something beautiful, that my family can share and cherish. Each step – from carefully chopping the apricots to carefully crimping the pie crust – was a small act of self-care, a tiny pause in the whirlwind of motherhood.

More than just a dessert, this spiced apricot pie represents a slice of peace in my hectic life. It's a reminder to slow down, to savour the simple pleasures, and to appreciate the beauty in the everyday. It’s a testament to the power of baking to soothe the soul and connect us to something larger than ourselves. It's a moment of pure bliss in a life often characterized by the urgent and the overwhelming. And, let's be honest, a delicious pie is always a welcome addition to any occasion!

I encourage you to give this recipe a try. It's surprisingly easy, and the reward is well worth the effort. Whether you're a seasoned baker or a kitchen novice, this recipe is accessible and adaptable to your own preferences. Feel free to adjust the spices, the amount of rum, or even try different fruits – the possibilities are endless! Let this recipe be your own moment of escape, a reminder to nurture yourself in the midst of life's many demands. The perfect slice of peace, one delicious bite at a time.
