Step-by-step

  • Preheat oven to 400 degrees.
  • Salt and pepper chicken legs.

  • Add olive oil and butter.
  • When oil/butter is hot, add chicken legs to the pan.
  • Using tongs, brown on all sides, about 2 minutes.
  • Remove chicken from pan.
  • Pour in wine, scraping the bottom of the pan to loosen any bits.
  • Cook for 1 minute.
  • Pour in tomatoes with their juice and add tomato paste.
  • Add salt and pepper to taste, stirring to combine.
  • Bring sauce to a boil, then turn off heat.
  • Add plenty of fresh herbs, 8 cloves of peeled (but whole) garlic, and the chicken legs.

  • Remove pot from oven and allow it to sit on the counter with the lid on while you boil the pasta.
  • Cook the pasta to al dente.

  • Check seasonings and adjust as needed.
  • To serve, pour sauce over cooked pasta, then arrange chicken pieces over the top.
  • Sprinkle generously with fresh Parmesan and serve with crusty French bread.

My Simple Weeknight Chicken Delight

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Between juggling work deadlines, school pickups, and the endless to-do list, the last thing I want is to spend hours in the kitchen. That's why I've developed a love for recipes that are both flavorful and incredibly easy to prepare. This Chicken with Tomatoes and Garlic dish is one of my absolute go-to recipes, a lifesaver on those chaotic weeknights.

The beauty of this recipe lies in its simplicity. It doesn't require a pantry stocked with exotic ingredients or advanced culinary skills. In fact, most of the ingredients are probably already staples in your kitchen. The combination of tender chicken, juicy tomatoes, and fragrant garlic creates a rich and comforting sauce that’s perfect for a simple pasta dish. The whole process takes less than an hour, which is a huge win for busy people like me. This makes it the perfect recipe for those nights when you crave something delicious but don't have much time.

The best part? The cleanup is a breeze! I usually cook this in a single ovenproof skillet, reducing the amount of dishes to wash after dinner. This is a game-changer when you're already exhausted from a long day. The flavors are so comforting and satisfying; it’s a meal that the whole family enjoys, from my picky eater to my husband. Even my friends have asked me for the recipe after tasting it – and trust me, getting recipe requests is always a compliment!

I often serve this dish over pasta, like cavatappi, but rice or even mashed potatoes would be wonderful alternatives. A sprinkle of fresh Parmesan cheese adds that final touch of creamy goodness, and a side of crusty bread helps soak up every last drop of that delicious sauce. It’s the ultimate comfort food. Sometimes, I’ll add a side salad to make it a more complete meal. But honestly, the chicken and pasta are so satisfying that a salad isn’t always necessary.

One thing that I really appreciate about this recipe is its versatility. Feeling adventurous? Experiment with different herbs or spices to customize the flavors to your liking. I've used everything from classic basil and parsley to more robust rosemary and sage, each creating a subtly different taste experience. The wine also provides depth to the sauce – and don’t worry about the cooking wine; it only takes a half cup and cooks down quite a bit before serving.

This chicken dish is more than just a quick weeknight meal; it’s a testament to how even the simplest ingredients can create a truly memorable culinary experience. It’s a dish that speaks of home, of warmth, and of the satisfaction of a well-prepared meal shared with loved ones. It's my go-to recipe, and I hope it becomes one of yours too. Let me know what you think if you try it!

So, if you're looking for a quick, easy, and flavorful chicken recipe that won't break the bank or require a culinary degree, then give this one a try. It's a true lifesaver, especially during a busy week. Let me know in the comments what you thought, and feel free to share your own tips and modifications – I’m always up for trying something new!
