Step-by-step

  • Prepare a parchment paper-lined (or foil-lined) dish that is approximately 7 inches in diameter and at least 2 inches high.
  • In a med-large microwave-safe mixing bowl, add the milk chocolate chips and sweetened condensed milk.
  • Microwave for 1 minute. Stir.
  • Microwave for another 30 seconds. Stir.
  • Mix in pomegranate molasses (syrup).
  • Mix in ½ teaspoon fleur de sel.
  • Pour fudge into parchment-lined dish, and smooth it out with a spatula.
  • Add pomegranate arils to the top of the fudge and use your hand to very gently pat them into the fudge so that they stick to the fudge as it cools.
  • Add another ½ teaspoon of fleur de sel right over the top of the fudge.
  • Place in fridge to set, or in the freezer if you are impatient when it comes to fudge (like me!). Just don’t forget about it in there because the inside of fudge should be room temperature.
  • Enjoy!

Life as a busy working mom is a whirlwind. Between juggling deadlines at the office, school pick-ups, and dinner prep, finding moments of peace and self-care can feel impossible. But even in the midst of the chaos, I’ve discovered a simple pleasure that helps me recharge: indulging in a delicious, homemade treat. And this Salted Pomegranate Chocolate Fudge is my absolute favorite.

I stumbled upon this recipe during a weekend getaway, searching for a unique dessert to take on a girls' trip. The combination of rich, dark chocolate, tart pomegranate, and a hint of salty fleur de sel sounded exquisite, and it didn't disappoint. It's the perfect balance of sweet and savory, decadent yet refreshing. The vibrant color of the pomegranate arils adds a touch of elegance, making it a dessert worthy of any special occasion (or a perfectly indulgent Tuesday night treat!).

Making this fudge isn't complicated. It's a surprisingly easy recipe, even for someone like me who's more comfortable with a quick stir-fry than a complex baking project. The microwave method simplifies the process significantly; melting the chocolate in the microwave saves time and minimizes dishwashing. The only slightly challenging part is gently patting the pomegranate arils into the fudge before it sets. But the beautiful result is worth the little extra effort.

The taste? Let's just say it's heavenly. The creamy chocolate melts in your mouth, the tangy pomegranate cuts through the sweetness, and the subtle saltiness adds a surprising depth of flavor. It's a truly unforgettable experience. I often find myself savoring each bite, taking a moment to appreciate the small joys in life. This recipe is more than just a dessert; it's a reminder to pause, indulge, and reconnect with my inner peace amidst the busy-ness of life.

This fudge has become a staple in my household. I’ve made it for potlucks, shared it with friends, and even surprised my family with it after a long, tiring day. Every time, the reaction is the same: pure delight. It’s a conversation starter, a mood booster, and a delicious way to show loved ones how much you care. And that, my friends, is priceless.

Beyond its deliciousness, this fudge is remarkably versatile. The pomegranate molasses can be substituted with other fruit syrups, adding exciting variations to the flavor profile. Experiment with different types of chocolate, nuts, or even dried fruits to customize the recipe and make it your own. The beauty of this recipe lies in its simplicity and adaptability.
