Step-by-step

  • Heat the oven to 180°C.
  • Mix oil, curry powder, salt and pepper and brush the corncob with the marinade.
  • Roast the corn for about 30 minutes in the oven turning it from time to time, then set aside.
  • Cook the rice according to the package instruction and set aside.
  • While rice is cooking make the sauce by simply mixing all ingredients in a food processor. Season to taste with salt and cayenne pepper.
  • Heat 1 Tbsp of oil in a pan. Add first the curry powder, let fry for a minute at medium to high heat, then add the onions.
  • When onions become translucent add the cooked rice. Fry at medium to high heat until the rice gets a little crispy. Season with salt and set the rice aside.
  • In the same pan heat another 1 Tbsp of oil and fry the snow peas at high heat. When the peas are cooked, but still tender to the bite season with some salt, then add also the grapes and fry for another few minutes at medium heat.
  • Remove the corn grains from the stem (I used a knife and just cut along the stem).
  • Arrange the rice, the peas and grapes on a plate. Then top with the roasted corn, the curry sauce and some fresh parsley.
