Standard ingredient lists omit the thermal behavior of milk solids when combined with sugar syrups. Boiling water and sugar to dissolve the granules requires medium heat to prevent burning, but the subsequent addition of butter demands immediate mechanical dispersion via a whisk. If the butter separates from the sugar solution, lower the burner output and emulsify vigorously before incorporating dry powders.

The Chilling and Shaping Phase

Transfer the saucepan contents to a shallow stainless steel container to accelerate heat dissipation before refrigeration. Chill the mass for 45 minutes until firm to the touch, ensuring the mixture holds an indentation without sticking to latex gloves. Portion uniform pieces using a 1-tablespoon measure. Flatten each disk slightly, enclose a single chocolate piece in the center, and seal the edges completely to prevent leakage.

  • Avoid over-heating the sugar and water solution, which leads to a hard, brittle final texture rather than a smooth fondant consistency.
  • Keep the remaining mass refrigerated while shaping individual pieces because ambient kitchen heat softens the butter rapidly.
  • Store the finished confections in a sealed container in the refrigerator for up to five days to maintain structural integrity.
