  • Total Time: 30 minutes
  • Served Person: 2

Step-by-step

  • In a processor, process onion, garlic, ginger, walnuts and cilantro until finely chopped. Alternatively, cook the onions and garlic in ½ tsp oil until they are golden and then add to the processor.
  • Add the spices, salt, basil, rice, half of the cooked lentils and pulse a few times until well combined.
  • Transfer to a bowl with the rest of the lentils. Add ketchup, oil, flax egg and mix everything until evenly mixed in. Mash a bit if needed and mix in.
  • Taste and adjust salt, spice, herbs if needed.
  • Add in the breadcrumbs or flour and mix in.
  • Let the mixture chill for 10 minutes.
  • If the chilled mixture is too wet, add in more flour or breadcrumbs. The amount needed depends on the moisture in the veggies, the kind of lentils and just general mood of things in the mixture. Add more breadcrumbs or flour if too sticky wet. Add another flax egg if too crumbly to make patties.
  • Shape into 4 large patties. Pack well.
  • Heat a skillet over medium high heat. Add a drizzle of oil and spread it around.
  • Place patties on the skillet and cook for 4 to 6 minutes per side.
  • Serve with vegan ranch or mayo or ketchup, mustard or other dressing of choice. Add some caramelized onions or other toppings.

My Unexpected Culinary Adventure: Lentil Walnut Burgers

As a busy working mom, finding time to cook healthy and delicious meals often feels like a Herculean task. My days are a whirlwind of meetings, school runs, and trying to maintain some semblance of order in our household. Dinner time is usually the most stressful part of my day. I'm constantly searching for recipes that are quick, easy, and nutritious, and that don't require a culinary degree to prepare. That's why I was so excited when I stumbled upon this lentil walnut burger recipe. I'd always been intrigued by veggie burgers, but many seemed overly complicated or just didn't taste very good. This recipe, however, promised a delicious and satisfying meal without the fuss.

The initial skepticism melted away as I started chopping the ingredients. The combination of walnuts, lentils, and spices created a wonderful aroma that filled my kitchen, promising a flavorful culinary journey. The instructions were remarkably straightforward, a welcome change from some of the overly complicated recipes I've attempted. I loved how the recipe allowed for some improvisation. The amount of breadcrumbs needed, for example, was flexible – a nice nod to the reality that ingredients can behave differently based on their moisture content and even the day's weather! It felt empowering to have that control in the kitchen.

The process of making the patties was surprisingly therapeutic. The act of shaping the lentil mixture into perfect little rounds became a meditative exercise, a welcome pause in the chaos of my daily life. The aroma intensifying as the patties sizzled in the pan was simply divine, hinting at the delicious meal to come. The burgers cooked beautifully – perfectly crispy on the outside and deliciously tender inside. The texture was surprisingly meaty, surpassing many store-bought veggie burgers I've tried. I served them on whole wheat buns with a simple vegan mayo and some caramelized onions, a flavorful combination that brought tears to my eyes. I would never have thought that a vegetarian burger could be so satisfying.

The success of this recipe has been a game changer in our family's diet. It's a quick meal that I can prepare on a busy weeknight, and it’s a guaranteed crowd-pleaser. The kids love them, my husband raves about them, and most importantly, I feel good knowing that I'm feeding my family a healthy and delicious meal. It’s a testament to the power of simple, fresh ingredients combined with a little bit of creativity and a lot of love. The lentil walnut burgers are now a staple in our weekly menu, a symbol of delicious, easy, and healthy eating. I've tried adding different spices, herbs, and toppings to experiment with the recipe. I've created a Mediterranean variation with olives and feta, a spicy version with jalapeños and chipotle peppers, and a more herbaceous version using fresh parsley and dill. Each variation has been a new delicious adventure, proving that even the simplest recipes can evolve and become a source of ongoing culinary exploration.

Beyond the convenience and the deliciousness, making these burgers is a reminder to myself that I can still find joy and fulfillment in everyday tasks, even amid the hustle and bustle of modern life. It’s a quiet moment of self-care within the chaos, a time when I can focus on creating something nourishing and satisfying for my family, and myself. The satisfaction of creating something so delicious from simple, accessible ingredients is something truly special.
