Step-by-step

  • In an iron skillet or large 28/30 cm skillet (Required: Must have a lid that fits your skillet/pan), add your olive oil and add your Italian sausages (gluten-free chicken and apple sausages, etc) and brown gently on all sides but not cooked through. (Remove sausage from pan and keep warm)
  • Add onion and garlic to the pan you just cooked the sausage in and saute gently then add the cumin, cinnamon, turmeric and paprika in the pan and saute for just a minute or 2 until your kitchen smells amazing. Then add the brown rice and stir well to coat all the rice with the spices. Add 2 and 1/2 cups of chicken/vegetable broth to the pan and use your wooden spoon to get all of those delicious browned bits off the bottom of the pan as that is what makes this moroccan sausage paella delicious. Now add the browned sausages back into the pan and put the lid on your pan and allow to slowly come up to a boil. Reduce the heat and gently simmer for 20 minutes.
  • Add the squash/pumpkin or any firm vegetables you wish to add to the Moroccan Sausage Paella and just nestle them within the rice. Put the lid back on the paella and continue to gently simmer for 20 minutes more.
  • Add the red and yellow bell pepper (capsicum), Asian eggplant and garbanzo beans and simmer in the Moroccan Sausage Paella for 5-10 minutes or until the rice is cooked.
  • Garnish your one pan Moroccan Sausage Paella with a drizzle of lemon juice and lemon zest and enjoy!

My Moroccan Sausage Paella Adventure: A Weeknight Delight

As a busy working mom, finding time to cook a healthy and flavorful meal can feel like a Herculean task. Between juggling work deadlines, school pickups, and after-school activities, the thought of spending hours in the kitchen often seems impossible. However, I've discovered the magic of one-pan wonders, and my recent foray into Moroccan Sausage Paella is a testament to how delicious and efficient cooking can be. This recipe is not just a quick weeknight dinner; it's a journey of aromas and textures that transports you to a vibrant Moroccan souk, all within the comfort of your own kitchen.

The beauty of this paella lies in its simplicity. It’s a vibrant blend of spices – the warm embrace of cumin, the subtle sweetness of cinnamon, the earthy depth of turmeric, and the vibrant kick of paprika. These spices dance together, creating a symphony of flavors that tantalize the taste buds. The Italian sausages, whether you opt for traditional pork or a healthier gluten-free alternative, add a wonderful savory element, lending a hearty richness to the dish. I prefer to use gluten-free chicken and apple sausages for a slightly lighter and more nuanced flavor profile. The addition of the squash, bell peppers, and eggplant brings a delightful textural contrast and a burst of freshness.

Preparing this paella is an enjoyable process. The initial browning of the sausages in a well-seasoned skillet fills the kitchen with an enticing aroma, promising a delicious meal to come. The careful layering of the ingredients, from the fragrant spices and rice to the colorful vegetables and succulent sausages, creates a visually appealing dish that's as pleasing to the eye as it is to the palate. The slow simmering allows the flavors to meld and deepen, creating a cohesive and harmonious taste experience. And the best part? Minimal cleanup! One pan, minimal dishes—a true lifesaver on busy weeknights.
