Step-by-step

  • Place all of the marinade ingredients into a large bowl and mix together.
  • Add the chicken, then cover with plastic wrap and marinade for at least an hour (or up to overnight).
  • Cook your rice as per pack instructions.
  • Whilst the rice is cooking, heat the oil on a high heat in a wok or large frying pan/skillet until hot.
  • Scoop the chicken out of the marinade with a slotted spoon and cook in the wok until slightly browned, and almost cooked right through.
  • Add in the chopped onion and cook for a further 2 minutes to soften the onion slightly.
  • Add in the marinade and heat through whilst stirring until bubbling throughout. It's important to ensure all of the sauce has been completely cooked through, as it's had the raw chicken in it.
  • Add in the peppers, mangetout/snow peas and dried chillies.
  • Cook for a minute, then stir through the spring onions/scallions.
  • Add a splash of water to the sauce if it needs loosening up.
  • Check one of the larger pieces of chicken to ensure it’s cooked in the middle. Then turn off the heat.
  • Take your boiled rice and spoon it into a small bowl.
  • Push it down with the back of a spoon, then place a serving plate on top and turn the whole thing over.
  • Tap the bowl to release the mound of rice. Repeat until you have four plates of rice.
  • Spoon the firecracker chicken around the rice and then sprinkle the top of the rice with the shichimi powder and the sesame seeds.
  • Top the rice with a wedge of lime and serve!

Firecracker Chicken: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like climbing Mount Everest. Sometimes, takeout wins. But not tonight! Tonight, we’re conquering the weeknight dinner dilemma with this ridiculously easy and flavorful Firecracker Chicken recipe. It's packed with vibrant flavors and textures, and it’s on the table in under 30 minutes—a true lifesaver on those crazy evenings when the kids are demanding snacks and my email inbox is overflowing.

The beauty of this dish lies in its simplicity. Forget complicated techniques and fussy ingredients; this recipe utilizes pantry staples and readily available produce to create a dish that's both impressive and satisfying. The marinade, a beautiful blend of sweet, salty, and spicy, tenderizes the chicken beautifully and infuses it with incredible flavor. I usually marinate the chicken overnight for maximum flavor penetration, but even an hour works in a pinch. The quick stir-fry adds a delightful crunch from the colorful bell peppers and snow peas, a perfect counterpoint to the tender chicken.

Why this recipe is a game-changer:

  • Speed: This dish comes together quickly, making it ideal for those busy weeknights when time is of the essence.
  • Flavor: The balance of sweet, salty, spicy, and savory flavors creates an explosion of taste in every bite.
  • Healthier Option: Compared to many takeout options, this dish is a healthier alternative, brimming with vegetables and lean protein.
  • Adaptable: Feel free to adjust the spice level to your preference. If you’re not a fan of intense heat, reduce the amount of chili. Similarly, you can substitute vegetables according to your preference or what you have on hand.
  • Impressive Presentation: This dish looks restaurant-worthy, making it perfect for impressing guests or just treating your family to something special.

The secret weapon in this recipe is the marinade. It's the magic ingredient that elevates this dish from ordinary chicken stir-fry to something extraordinary. The combination of fish sauce, brown sugar, soy sauce, chilli sauce, and vinegar creates a complex flavour profile that’s both addictive and satisfying. The sesame seeds add a lovely nutty aroma and a pleasing crunch. And don’t underestimate the power of the shichimi togarashi – this Japanese seven-spice powder adds a wonderful depth of flavour and a delicate heat.

I often make a double batch of this recipe, as the leftovers are just as delicious the next day. It makes a great packed lunch or a quick and easy dinner. I serve it with a side of steamed rice, but quinoa or even noodles would work wonderfully too. The possibilities are endless!

Beyond the practicality and deliciousness, this Firecracker Chicken recipe has become a symbol of my own evolving culinary journey. It started as a simple weeknight dinner solution, but it's transformed into a cherished family favorite. It's a dish that embodies balance – a balance between convenience and flavor, health and indulgence, and most importantly, the love I put into preparing a delicious meal for the people I love.

So, ditch the takeout menus and give this Firecracker Chicken recipe a try. It's a simple, flavourful, and satisfying meal that's sure to become a weeknight staple in your home, too. And trust me, you’ll be surprised at how much your family will love it!
