Step-by-step

  • Preheat oven to 350 degrees (375 if you want to substitute 4 boneless skinless chicken breasts -instead of the tenderloins- I usually pound mine out a bit if I use the full breast- EITHER way works great!)
  • Grease a 9 x 13 Pyrex dish, and then set up an assembly line: Pour the Ranch onto a large Plate, and next to that have a plate of Crushed up Ritz Crackers. Last have the greased Pyrex dish ready to go.
  • Season chicken with Salt & Pepper (add the OPTIONAL Cayenne if you like a little kick- but it’s definitely not necessary).
  • Dip the seasoned chicken into the ranch and coat well.
  • Roll the chicken in the Ritz cracker bits until completely covered.
  • Line the chicken up in the greased Pyrex pan. Add the Optional Dash of Parmesan Cheese if desired.
  • Bake for 35-45 minutes (if you used the tenderloins- they obviously fall on the shorter end of the cooking time frame). Test one to make sure it’s cooked all the way through!

Ritz Cracker Chicken: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Juggling work deadlines, school pick-ups, and keeping a household running smoothly leaves little room for complicated culinary creations. That’s why I rely on recipes that are both delicious and incredibly simple, and this Ritz Cracker Chicken recipe is a perfect example. It's become a staple in our household, a weeknight hero that consistently pleases the entire family (and even my notoriously picky teenage son!).

The beauty of this dish lies in its simplicity. Three main ingredients—chicken, Ritz crackers, and ranch dressing—transform into a surprisingly flavorful and satisfying meal. I love how the Ritz crackers create a wonderfully crunchy coating, offering a delightful textural contrast to the tender, juicy chicken. The ranch dressing adds a creamy, tangy base that complements the savory chicken perfectly. It's a recipe that's both foolproof and incredibly adaptable.

Adaptability is key for me, and this recipe shines in that aspect. Some nights, I'm all about the basics; salt, pepper, and the classic Ritz cracker-ranch combination are all I need. Other nights, I'll add a little cayenne pepper for a subtle kick, or sprinkle some Parmesan cheese on top for an extra layer of flavor. This recipe is flexible enough to accommodate whatever spices or ingredients I have on hand. It’s perfect for a quick weeknight meal, especially when paired with a simple side salad or roasted vegetables. The prep work is minimal, the cooking time is short, and the cleanup is a breeze – that’s my kind of cooking.

This recipe isn’t just for weeknights. We’ve taken it on family camping trips, adapting it slightly for the campfire. Wrapped in foil and cooked over the coals, it becomes a delicious and unique twist on classic campfire cooking. It's also a crowd-pleaser for casual get-togethers with friends. I’ve never had anyone turn down a second helping!

Beyond the ease and deliciousness, there's a sense of satisfaction that comes with serving a home-cooked meal that everyone enjoys. It’s a small victory in the midst of a busy day, a reminder that even amidst chaos, I can still create something special for my family. This simple chicken recipe is more than just a meal; it's a symbol of comfort, convenience, and the simple joy of sharing a good meal together. It’s the kind of recipe that builds memories, one delicious bite at a time.

So, if you’re looking for a recipe that’s both easy and delicious, look no further than this Ritz Cracker Chicken. It's the perfect answer for busy weeknights, unexpected guests, or just a craving for something comforting and flavorful. Give it a try – I promise you won’t be disappointed. And trust me, the compliments will roll in!

Tips and Variations:

  • For extra crispy chicken: Bread the chicken in the cracker crumbs twice for a thicker, crispier coating.
  • Spice it up: Experiment with different spices and herbs like paprika, garlic powder, or onion powder.
  • Add some veggies: Include some chopped vegetables like broccoli, carrots, or bell peppers in the baking dish for a more nutritious meal.
  • Make it a complete meal: Serve with a side of mashed potatoes, rice, or your favorite vegetable.
  • Use different crackers: Experiment with other crushed crackers, such as panko breadcrumbs, for a unique flavor and texture.

This Ritz Cracker Chicken recipe is a testament to the fact that simple doesn’t have to mean boring. In fact, often it’s the simplest recipes that hold the most delicious surprises. Happy cooking!
