As a busy working mom, I'm always looking for easy and delicious recipes that I can make for my family. This Minestrone Soup is one of my go-to recipes because it's packed with vegetables, beans, and pasta, and it's so flavorful and satisfying. Plus, it's a great way to use up leftover vegetables that I have on hand.

The best part about this soup is that it's so versatile. I can add or remove ingredients depending on what I have on hand and what my family is in the mood for. For example, I often add diced zucchini or bell peppers to the soup. And if I don't have any elbow macaroni, I'll use any other type of pasta that I have on hand.
